Microwave Sweetpotato Mug Cake

This sweetpotato mug cake is ready in minutes and is a great single-serving dessert or snack. Made with a handful of healthy ingredients you probably have on hand, this microwavable mug cake is also gluten free and vegan.

Ingredients  

  • 3 Tablespoon oat flour
  • 1.5 Tbsp peanut butter
  • 2 teaspoons of maple syrup
  • ¼ cup mashed sweetpotato
  • 2 Tablespoons almond milk
  • 1/4 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • Pinch of salt
  • 1 Tbsp mini chocolate chips, optional

Instructions 

  1. Mix all ingredients in bowl and transfer to a greased mug or ramekin.
  2. Microwave for 75-90 seconds each. Microwave strength varies, so adjust accordingly. If you like your cake softer,cook for less time. Allow to cool for 3-5 minutes before eating.
  3. Enjoy – pair with ice cream, yogurt, more chocolate chips, fruit, etc.

Notes

This is a great use for leftover mashed sweetpotatoes!
