This sweetpotato mug cake is ready in minutes and is a great single-serving dessert or snack. Made with a handful of healthy ingredients you probably have on hand, this microwavable mug cake is also gluten free and vegan.
Mix all ingredients in bowl and transfer to a greased mug or ramekin.
Microwave for 75-90 seconds each. Microwave strength varies, so adjust accordingly. If you like your cake softer,cook for less time. Allow to cool for 3-5 minutes before eating.
