If you wanted a gluten free potato bread recipe, you could use a combination of oat flour and a gluten free flour. I did not test this though.

How To Make Homemade Apple Potato Bread

Making this potato apple bread is very easy. 

  • Preheat oven to 350 and grease 9×5 bread pan.
  • Mix egg, mashed potatoes, coconut oil, greek yogurt and maple syrup. Whisk.
  • In a separate bowl, mix dry ingredients (flour through baking soda).
  • Mix wet into dry ingredients, adding in chopped apples last. 
  • Bake for 47-50 minutes, or until toothpick comes out clean.

  • To store this homemade apple potato bread, let it cool completely and store in an airtight container or ziplock bag for up to two days. You can also refrigerate it, and it will last up to 4-5 days.

Can You Freeze Whole Wheat Potato Bread?

This cinnamon apple bread recipe works great for freezing, so later you can thank yourself. 

Once it cools completely, place in a freezer-friendly bag or plastic wrap. I like to pre-slice it ahead of time and freeze in a few different bags for easy reheating.

To reheat, let thaw before serving, or heat up in the microwave or toaster. Slather with butter or peanut butter. Enjoy!

  3. To another bowl, add flour, oat flour, sugar, cinnamon, salt, baking powder and baking soda. Mix the dry into the wet ingredients, folding the apples in last.
  4. Pour into loaf pan and bake for 47-50 minutes, or until toothpick comes out clean.
  5. Let cool for 10-15 minutes before slicing.

  1. Sarah, the apple potato bread seems ideal for running with carbs and potassium. Seeing the peanut butter on spread on top looks really tempting!

  2. I did not know they won in the potassium level contest!!! I crave carbs after a hard workout or run. My trainer helps more people with weight loss than anything else so she likes to harp at me about my night time carbs. Which I do tend to eat more than I should have.
    But I have changed her way of thinking when she started running. She had to up her calories and carbs to fuel. she was losing muscle trying to compensate!

    1. You don’t really taste the potatoes at all! But if you want to, you could certainly use sweet potatoes but it may change the flavor a little bit since they are a little stronger.

    Did you mash the whole potato or did you leave some chunks whole?

    1. YES, that makes total sense! Your show requires so much energy. The potassium fact is pretty cool, isn’t it? Not that I could ever leave my beloved bananas, but potatoes are superstars too! I mashed the potatoes completely, but chunks may be a good addition if you like that texture.
