This vegetarian breakfast pizza recipe is filling with both complex carbohydrates and satiating protein. It’s also bursting with flavor and a great way to start the day with veggies!

What’s the truth about breakfast anyway? Is it the most important meal of the day? Do we really need to eat it within 30 minutes of waking up? How do we know what’s the truth or just a rumor? 

So, I’ve always been a breakfast lover. It’s my favorite meal of the day.

Scratch that – BRUNCH is my favorite meal of the day. It’s between breakfast and lunch, and often includes all my favorite breakfast foods, except just MORE of them.

Any foodie loves the choice of an asparagus quiche, fruits, pancakes, berry waffles, or french toast sticks. Plus, mimosas, dips and the whole spread.

Brunch is the perfect excuse to try it all. Especially with this veggie breakfast pizza recipe.

Vegetarian Breakfast Pizza Ingredients

This veggie breakfast pizza is filled with whole grains (complex carbohydrates), ample fiber from the sweet potatoes and veggies, healthy fats and satiating protein from the eggs and cheese, and all around flavor.

This meets all of the qualifications for a balanced, healthy, salivating breakfast.

You can modify the toppings, but here is what I’ve used:

  • onions
  • sweet potatoes
  • broccoli
  • tomato
  • mushroom
  • artichokes
  • eggs
  • tortilla or flatbread
  • cheese

Veggie Sweet Potato Avocado Breakfast Pizza

Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 22 minutes

This veggie sweet potato avocado breakfast pizza is filling with both complex carbohydrates and satiating protein. It's also bursting with flavor and a great way to start the day with veggies!

Ingredients

  • ½ medium sweet potato, cut into discs
  • ¼ tsp garlic powder
  • 1/2 tsp Italian seasoning
  • ¼ tsp oregano
  • ¼ tsp basil
  • 1/8 - 1/4 tsp red pepper flakes, optional
  • 1 tortilla wrap or flatbread
  • ½ ripe avocado
  • ¼ cup sliced olives
  • 1/3 cup sliced mushrooms
  • ¼ cup sliced artichokes
  • 1/3 cup chopped tomato
  • ¼ cup sliced broccoli florets
  • 1 handful of spinach
  • 2 eggs
  • ¼ cup cheese, I used feta and shredded mozzarella

Instructions

  1. Preheat oven to 425 degrees. While waiting for oven to preheat, you can cut your vegetables. Chop cooked sweet potato into disc shapes.
  2. Mix your seasonings in a small bowl.
  3. Toast flatbread for 2 minutes in oven to get them a little crisp. Then, scoop out half of avocado and spread it on the flatbread as the base layer. Layer sweet potato discs on top of avocado.
  4. Add additional toppings based on your liking. I used Kalamata olives, mushrooms, tomatoes, artichokes, broccoli and spinach.
  5. Crack two eggs over pizza and top with choice of cheese and seasoning blend.
  6. Bake for 12-14 minutes, or until egg whites are fully cooked.

  1. My mouth is watering looking at that pizza! I couldn’t imagine not having breakfast but I do find it frustrating how so many breakfast foods are sugar and refined carbohydrates. That’s not going to help with starting your day or weight management.

  2. HA! I just said this to my friend the other day! Brunch is my favorite meal because it’s BIGGER than breakfast! I love to eat anything that I can put peanut butter on. Lately I’ve been making banana bowls or microwave banana bread. NOM!

  4. I wake up way too hungry to not eat breakfast, and if I skip it my good eating habits are shot for the day. If I could make delicious looking breakfasts like these every day, I would enjoy it a whole lot more!!

  5. I’m one of those people who totally doesn’t understand how anyone can skip breakfast because this girl wakes up HUNGRY ๐Ÿ˜› Luckily breakfast is probably my favourite meal of the day (and maybe that’s why I wake up ready to eat? Haha!)

  6. Ohhhhh man, this is a recipe that totally caught my eye, I LOVE HOW GOOD THIS LOOKS. I would definitely see myself eating this for supper since I have more of a sweet tooth in the morning. I absolutely love breakfast and I am always looking forward to it, I actually don’t quite understand how people don’t die of hunger when they don’t eat breakfast!

  7. Breakfast is def my favorite meal of the day. It involves coffee and lots of nut butter… what more could you ask for?!? This recipe looks so delicious too!!

    1. It can! I saved some for leftovers and it does get a little softer, but should be good if you have time to throw it in the oven or toaster oven for a few minutes to crisp it back up. The flavors were good enough for me to just eat it as is the next day.

  8. Breakfast is my favorite meal of the day! Oddly enough, I’m not such a fan of brunch because uts usually way later than I wake up and I get too hungry to wait!
    I love the soup of this breakfast pizza! Drippy eggs?! Yes please!

  9. My go-to & my favorite breakfasts are different. I usually rock overnight oats or a homemade parfait on the weekdays. But I love me some homemade hash on the weekends with whatever meat I have leftover from the week. Corned beef or Ham are my two favorites. Toss in some potatoes, veggies, scrambled eggs. Mmm.

  11. This has all my favourites – sweet potato egg and avocado are such a killer combination. I’d splurge and maybe throw some goat cheese on there. Now I just need to find a wrap that would hold together. Do you think just a standard tortilla wrap would hold everything ok?
    I love breakfast. Everything about it. I need to work at eating it earlier though – I often let a couple hours go by and I know that’s not beneficial for metabolism. Great post!

    1. If you use a standard tortilla wrap, I’d maybe load it up with a little less, or put it in the toaster oven/oven for a couple minutes before decorating it to give it some strength! Otherwise you could turn it into a breakfast wrap?

  12. Gosh, breakfast is seriously SOOO good. I look forward to it every night! My breakfast go-to right now is baked oatmeal and then a piece of fruit later in the morning.
    I never think to have a breakfast pizza- but I do not hate the idea! Sweet potato & avocado make a lovely combination!.

  13. That looks amazing!! I love those kinds of breakfasts. My go-to is a frittata but I always use sweet potatoes because I think they help me to stay full for the rest of the morning. My only issue with breakfast is not having enough time during the week to cook as much as I would like!
