I’ve always been a waffles girl. I prefer the sturdiness of belgian waffles to pancakes any day, and they are a favorite part of my weekend morning routine.
And these fluffy chocolate protein waffles have the flavor of pancakes inside a sturdy waffle core.
I promise you, if you don’t have a functional waffle maker, go ahead and get yourself one.
It’s so easy to make things in bulk to freeze for later, and your future self (and kids!) will thank you.
You can even serve these waffles to babies. There are no ingredients to avoid in here and no added sugars!
Coconut can be an allergen for some, though, so make sure you’ve already introduced other allergen foods and check with your pediatrician if you have further questions.
ALLERGEN TIP
Experts and researchers recommend introducing allergen foods earlier rather than later. Here’s a post about the importance of introducing peanut butter early!
These are easy to make in advance or whip them up in 10-15 minutes for a slow weekend breakfast.
These are my kodiak cake sheet pan pancakes are favorite fun high protein breakfast options for kids.
Anything with chocolate is a favorite here! But, normally chocolate flavor adds sugar and no protein, but not these coconut flour waffles! Enjoy the flavor and nutrition with these delicious protein chocolate waffles.
Here’s what you’ll need to make this tasty coconut flour waffles recipe.
If you would like the waffles sweeter, you may choose to add a tablespoon of maple syrup or honey to the batter, or just top with syrup!
Optional favorite topping ideas – fresh fruit, cottage cheese, yogurt, nuts/seeds, chocolate chips, etc.
Coconut flour waffles recipes aren’t always easy to test, since coconut flour can be dense. We’ve also added whole wheat flour as well to blend in, so this recipe is not gluten-free.
Start by pre-heating your waffle maker and spraying with a non-stick cooking spray.
Combine the wet and dry ingredients in separate bowls, and then combine together and pour waffle batter onto the warm skillet.
Cook for 3-5 minutes. Note that cooking time may vary depending on your waffle maker.
Mine took about 3 minutes for perfection!
There is 15 grams of protein per waffle. You could easily make this a meal with 20-25 grams of protein by topping with peanut butter and greek yogurt!
Coconut flour can be tricky, and usually not a 1-1 substitution with other flours since it is more dense. However, since it is such a small amount here, using almond flour or another gluten-free flour should work.
You can store any extra chocolate brownie waffles in a tupperware or airtight container in the fridge. To freeze, place in a freezer-safe bag or tupperware container for up to 3 months. I prefer to reheat in the toaster oven or one to keep them crisp.

*I used a tbsp. of whole wheat flour to enhance the texture a little bit. If you wanted to make this gluten free, you could use 3 tbsp of coconut flour.

Well don’t these look ridiculously delicious! Pinning to make for later <3
LOL #FoodBloggerProblems. So true! These waffles look amazing. I tend to be a pancake person, but these might just switch me over!! Happy RDN Day!
HI Sarah! So nice to see your blog- so lovely! I am definitely a carb person, I don’t sway towards one or the other to be honest, but do typically make more pancakes from scratch just because I only have an egg waffle pan! I would top these with peanut butter, hands down! My favorite combo! Cheers to RDN day!
Hi Elizabeth – I’m a big carb lover too! And is there any better way than topping with peanut butter?! Happy RDN day!
Yum! I love the soft coconut flour consistency too! Pinned!
I feel like my tastebuds are more in tune when coconut flour is involved!
I love me some waffles! I could probably eat them everyday, and totally would if I had more than just a belgium waffle maker. That sucker makes some huge waffles!
Oh wow, I don’t think I’ve seen a belgium waffle maker! I could totally eat waffles every day!
I have an awesome waffle maker and don’t use it nearly enough- thanks for some delicious inspiration! Happy RD Day!!
Yay. Now that I’ve dusted mine off, I’m all about the waffle recipes. Happy RD day, Jess!
Wow. These look so decadent!! I LOVE chocolate for breakfast!
Me too!
These look delicious! I love waffles and pancakes (and of course brownies too!)
Great American classics 🙂
Serious yum to my brownie loving heart. Thankfully I’m getting a bit better at working my (decrepid) waffle maker, but damn I still lack the patience to wait for that silly light to go off so mine don’t stick all over the place and end up a mound of crumbles. I it weren’t for this, I’d take waffles over pancakes everyday.
These only took a few minutes on my waffle maker but otherwise I would have trouble waiting for these too!
I make pancakes way more often, but I think if I were to order out I would choose waffles. I always get nervous making waffles b/c I have a few disasters…. but I do love them! The cocoa powder + banana combo here is my favorite. I’m pinning them for when I am brave. 😀
I was intimidated at first too but my waffle maker actually makes the process and clean up pretty easy!
Ha- I love your #FoodBloggerProblems – but even more so- brownies for breakfast? Yes please. Happy Wednesday!
Brownies for breakfast is totally possible! Happy Wednesday, Anna Marie!
