Easy Chocolate Protein Waffles

I’ve always been a waffles girl. I prefer the sturdiness of belgian waffles to pancakes any day, and they are a favorite part of my weekend morning routine.

And these fluffy chocolate protein waffles have the flavor of pancakes inside a sturdy waffle core.

I promise you, if you don’t have a functional waffle maker, go ahead and get yourself one.

It’s so easy to make things in bulk to freeze for later, and your future self (and kids!) will thank you.

You can even serve these waffles to babies. There are no ingredients to avoid in here and no added sugars!

Coconut can be an allergen for some, though, so make sure you’ve already introduced other allergen foods and check with your pediatrician if you have further questions.

Anything with chocolate is a favorite here! But, normally chocolate flavor adds sugar and no protein, but not these coconut flour waffles! Enjoy the flavor and nutrition with these delicious protein chocolate waffles.

  • High in Protein and Fiber – These protein waffles are made without protein powder (although adding chocolate protein powder would be delicious!), but you could easily add some to increase the protein as well. I love a breakfast that kick starts the day with protein. Here are some more ideas for how to get 25 grams of protein at breakfast. Protein and fiber help stabilize blood sugar and keep you full, so are important nutrients for a balanced breakfast.

Ingredients

Here’s what you’ll need to make this tasty coconut flour waffles recipe.

  • eggs
  • choice of milk – I love them with unsweetened coconut milk or dairy milk
  • coconut oil – You could also use butter or cocoa butter in its place.
  • coconut flour – I wouldn’t recommend substituting for the coconut flour since it is a dense flour.
  • whole wheat flour – We’re only using 1 tablespoon of whole wheat flour, which I think produces a better texture and consistency. However, to keep it gluten-free, you could omit the whole wheat flour altogether and just do all coconut flour.
  • banana – The banana is a “natural” sweetener.
  • baking soda
  • cocoa powder
  • salt or sea salt
  • cinnamon

If you would like the waffles sweeter, you may choose to add a tablespoon of maple syrup or honey to the batter, or just top with syrup!

Optional favorite topping ideas – fresh fruit, cottage cheese, yogurt, nuts/seeds, chocolate chips, etc.

How to Make Chocolate Brownie Waffles

Coconut flour waffles recipes aren’t always easy to test, since coconut flour can be dense. We’ve also added whole wheat flour as well to blend in, so this recipe is not gluten-free.

Start by pre-heating your waffle maker and spraying with a non-stick cooking spray.

Combine the wet and dry ingredients in separate bowls, and then combine together and pour waffle batter onto the warm skillet.

Cook for 3-5 minutes. Note that cooking time may vary depending on your waffle maker.

Mine took about 3 minutes for perfection!

FAQ

How much protein is in chocolate protein wafles?

There is 15 grams of protein per waffle. You could easily make this a meal with 20-25 grams of protein by topping with peanut butter and greek yogurt!

Can I substitute anything for coconut flour?

Coconut flour can be tricky, and usually not a 1-1 substitution with other flours since it is more dense. However, since it is such a small amount here, using almond flour or another gluten-free flour should work.

How to store and freeze

You can store any extra chocolate brownie waffles in a tupperware or airtight container in the fridge. To freeze, place in a freezer-safe bag or tupperware container for up to 3 months. I prefer to reheat in the toaster oven or one to keep them crisp.

Ingredients

  • 2 eggs
  • 2 tbsp milk of choice (I used coconut milk)
  • ½ tsp vanilla extract
  • 1 tbsp coconut oil, melted
  • 1 ripe banana, mashed
  • 2 Tbsp coconut fllour
  • 1 Tbsp whole wheat flour*
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • ½ tbsp. cocoa powder
  • Toppings: banana slices, cocoa nibs, berries, peanut butter, chia seeds, etc.

Instructions

  1. Preheat skillet or waffle iron and spray with non stick cooking spray.
  2. Combine egg, milk, coconut oil, vanilla, and mashed banana in one bowl. Next, mix dry ingredients in other bowl (flour, baking soda, salt, cinnamon and cocoa powder). Combine wet and dry and pour batter onto iron. Batter should be thick.
  3. Cook according to waffle maker. Mine took about 3 minutes on high. *

Notes

*I used a tbsp. of whole wheat flour to enhance the texture a little bit. If you wanted to make this gluten free, you could use 3 tbsp of coconut flour.

Thankfully I’m getting a bit better at working my (decrepid) waffle maker, but damn I still lack the patience to wait for that silly light to go off so mine don’t stick all over the place and end up a mound of crumbles.
