I hope your week is going great! I’m doing more than just showing a day of snacks and meals today, I’m sharing your next healthy granola snack recipe with this Coconut Cinnamon Maple Granola.

I’m in a granola phase, if you can’t tell through my high protein granola and my pumpkin peanut butter granola. Granola is just so versatile and easy to add to anything and is a great athlete snack

I’d never really thought twice about making my own, until the last year or so. HUGE MISTAKE. Those days are long behind me now. I could easily spend lots of $$ on granola in the stores so it was about time I just did it myself. 

I’m a true granola believer and this healthy granola recipe will make you one, too. Plus, granola is such a fabulous road trip food idea and is so portable.

Is Cinnamon Maple Granola Healthy?

I’m obsessed with this coconut granola, and I foresee the creation of many more varieties coming. I instantly became infatuated the minute my oven started producing the amazing smells of maple and cinnamon.

For a hot minute, I thought I was in a full-fledged bakery making rows and rows of freshly baked cinnamon buns. Coconut maple cinnamon granola will do that to you!

Let’s talk about cinnamon for a sec. Did you know it may help in regulating blood sugar? I add it to just about everything, from yogurt, yogurt smoothies, gluten free oatmeal bakes, toast, so naturally, it was going to find its way into granola.

But really, how could you even have granola without cinnamon? Like how would that exist?

The hardest part about cooking this healthy granola is waiting for these little baby clusters to cool. As I mentioned above, you’re the master baker in your own little bakery and you just want to eat them all!

Or just taste them to make sure they’re acceptable to sell in your non-existent bakery kitchen. Taste testing leads to superb products, right? Just quality assurance.

We went through the first batch so quickly that I experimented with round two, tweaking a few things.

What Do You Need For Maple Cinnamon Granola?

The best part is that this takes 10 minutes to prepare, 45 minutes to bake, and uses 6 simple ingredients, which you probably already have at home.

And, you’re avoiding all those weird-name store ingredients with this easy sheet pan granola. 

So all of this greatness can be ready in an hour, but remember to allow some time to cool before breaking into chunks.

What sets this apart are the baked, caramelized crisp coconut flakes within the granola clusters, but then you also top it with light, fresher flakes.

Match made in heaven.

How Long Will Maple Granola Last?

Oh, and this maple cinnamon granola should last up to a week, but I doubt it will be around that long.

This healthy granola really goes perfectly over oatmeal or with a creamy, greek yogurt. My yogurt is much more pleasurable when it has a little crunch!

It’s no reason that oats are a staple pantry ingredient that I always shop for on my runners grocery list

Coconut Cinnamon Maple Granola

Yield: 8 servings
Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes

This Coconut Cinnamon Maple Granola is made with oats, maple syrup, cinnamon and coconut, and makes for a delicious tasty treat that's good on its own or in any oatmeal, yogurt, or trail mix.

Instructions

  1. Preheat oven to 325-330. Line baking sheet with parchment paper. Combine all ingredients into large bowl and stir until combined well. Spread mixture onto baking sheet in an even layer (press down if you have to).
  2. Bake for 30-35 minutes. After removing from oven, top with 2 additional tbsp coconut flakes and let cool for 15-20 minutes, before breaking into pieces.

    I totally hear you on the whole snack-turning-into-meal thing. That happened to be the other night. I started into some chips, then decided I was hungry enough to add a chicken breast and a salad. Oops. : )

    1. It happens to me alot, the snacks just don’t hold me over. Hence, I gravitate towards more smaller “meals” throughout the day! We just have to listen to our hunger cues.

  7. I have been thinking about making some granola for like… 3 weeks but I have not had the time/motivation/energy to do so. When I saw cinnamon my ears pricked right up!     1. It was my first event but it seems like it will be a great resource – everyone was so nice and friendly! I’ve definitely tried to immerse myself in as many meet up groups as possible about blogging and networking.

    I had cottage cheese for breakfast with granola yesterday, an old favorite combination of mine, and I loved it! Definitely want to make this so I can have it again.

  13. I so easily forget about granola and how damn easy it is to make your own. But then I make a batch and the smell of my house is enough to make me a total convert again. My favorite granola tip/hack is adding egg whites to my liquid mixture – this somehow create big CLUSTERS that stick together. Oh man I’m such a cluster girl. Try giving it a go.
    And no – granola most absolutely definitely could not exist without cinnamon. Not even a little bit.
    PS – I have no idea what any of those fancy things were that you got at your dinner – haha – but so cool you got to attend such a ritzy blog event!
