These Buttery Cheddar Smashed Sweet Potatoes only require 6 ingredients, and are the perfect mix of sweet and savory. A cheesy and buttery outside combines with a soft and sweet inside that will tantalize your tastebuds.
Goood morning! On the topic of mornings, I’ve made it out for morning runs two out of the three days this week. That’s a big deal for me, because I am typically NOT a morning running person. But I kinda like it.
What I’m finding is that I feel more energized throughout the day, and I’m not having to spend mental time figuring out when/if I’ll get a workout in.
I made a valiant effort this weekend to slow down. I got a manicure and pedicure (self care ftw), and basically lounged all day on Sunday after the Easter church service. Days like those are far, few and in between, but are so needed when life gets so busy.
We were also eating plenty of these sweet potatoes. PSA: I have an extreme obsession and love for sweet potatoes. Anyone else with me? They’re so versatile, so tasty and so nutrient dense.
You can use them in blueberry sweet potato bread as a garnish, as meatless plant based nachos, in a healthy turkey burger, on top of pizza, in pizza crust, a sweet potato smoothie, and so much more. How to Smash Your Sweet Potatoes
So, the key for these Buttery Cheddar Smashed Sweet Potatoes is to try to find sweet potatoes that are similar in size, to ensure similar depth and size in the coins. Once you cut and cook them, you’ll smash them with your fork.
Just make some indentations for the butter goodness to seep into.
And now you have an empty palate for which you can stuff anything your heart desires into (garlic, oil, fruit, chocolate, nuts…the opportunities are endless)!
Then, you’ll add your cheese and throw them in the oven for 15-20 minutes to get crispy.
I added more cheese with a few minutes left, because who is opposed to more cheese? More flavor, more calcium and more protein.
Short on time?
Oh, and my trick here is that I microwave my sweet potatoes when I’m short on time. Rather than waiting for the oven to preheat and baking them for 30 minutes, I pop them in the microwave for 6-7 minutes.
My microwave method isn’t ideal if you’re looking for crispy sweet potato fries, but it’s a speedy method for some quick prep.
I would imagine you could even grill these for some more flavor. Hope you guys enjoy these as much as we did! We paired them with some burgers and asparagus for a nice outdoor meal.
Another fun way to use sweet potatoes is by making these bacon wrapped sweet potatoes!
- 2 medium to large sweet potatoes
- 3-4 tbsp butter, melted
- 2 cloves garlic, crushed
- 1 tsp Italian seasoning
- 1 tsp paprika
- Salt and pepper, to taste
- 1/3 cup shredded cheese + 1-2 tbsp for topping (I used cheddar)
- Preheat oven to 350. Cook sweet potatoes until they are tender. You can microwave them for 5-7 minutes, or bake for 25-30 minutes.
- While sweet potatoes are cooking, melt butter and mix with garlic and spices.
- Cut sweet potato into coin shapes, smash with a fork and arrange on your baking sheet.
- Pour mixture over sweet potatoes and top with shredded cheese. Bake for 15 minutes, garnish with some more cheese, and broil on low for 2 more minutes.
