Oven Baked Cheesy Sweet Potatoes

We were also eating plenty of these smashed sweet potatoes, which are basically like mini cheesy baked potatoes. 

PSA: I have an extreme obsession and love for sweet potatoes.  They’re so versatile, so tasty and so nutrient-dense.

But, honestly, I haven’t made too many sweet potato and cheese recipes.

And I’m wondering why the heck not know that I know they are basically a match made in heaven. 

Ingredients For Oven Baked Cheesy Sweet Potatoes

Obviously, these cheesy garlic sweet potatoes require the essentials:

  • sweet potatoes
  • butter
  • garlic
  • Italian seasoning
  • paprika
  • cheese of choice

How to Smash Your Sweet Potatoes

So, the key for these Cheesy Sweet Potatoes is to try to find sweet potatoes that are similar in size, to ensure similar depth and size in the coins.

Once you cut and cook them, you’ll smash them with your fork. Or make any other shape/indentation you want to. 

This is how we infuse flavor into the sweet potato with cheese.

Just make some indentations for the butter goodness to seep into: sweet potatoes + butter + cheese + spices.

And now you have an empty palate for which you can stuff anything your heart desires into (garlic, oil, fruit, chocolate, nuts…the opportunities are endless)!

Then, you’ll add your cheese and throw the sweet potatoes with cheese in the oven for 15-20 minutes to get crispy.

I added more cheese with a few minutes left, because who is opposed to more cheese? More flavor, more calcium, and more protein.

These go nicely with baked lemon pepper chicken tenders.

Cheesy Sweet Potatoes Hack If You’re Short On Time

Oh, and my trick here is that I microwave my sweet potatoes when I’m short on time.

Rather than waiting for the oven to preheat and baking them for 30 minutes, I pop them in the microwave for 6-7 minutes.

My microwave method isn’t ideal if you’re looking for crispy sweet potato fries (use this method, similar to my crispy parsnip fries), but it’s a speedy method for some quick prep.

I would imagine you could even grill these for some more flavor.

Prep Time 5 minutes
Cook Time 40 minutes
Total Time 45 minutes

Ingredients

  • 2 medium to large sweet potatoes
  • 3-4 tbsp butter, melted
  • 2 cloves garlic, crushed
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1/3 cup shredded cheese + 1-2 tbsp for topping (I used cheddar)

Instructions

  1. Preheat oven to 350. Cook sweet potatoes until they are tender. You can microwave them for 5-7 minutes, or bake for 25-30 minutes.
  2. While sweet potatoes are cooking, melt butter and mix with garlic and spices.
  3. Cut sweet potato into coin shapes, smash with a fork and arrange on your baking sheet.
  4. Pour mixture over sweet potatoes and top with shredded cheese. Bake for 15 minutes, garnish with some more cheese, and broil on low for 2 more minutes.

  1. Delicious and easy! I didn’t have cheddar, just Parmesan and mozzarella. So half the coins had one kind and the other had the other. I want to try again with cheddar.
    How thick are the coins supposed to be?

    It’s kind of comforting hearing that I’m not the only one who isn’t a true morning runner. I just usually take my time in the morning, but during the summer I like to do more running runs because the afternoons are so warm.
