While I love to cook food within my own kitchen, I strongly dislike the thought of a million ingredients or hours that will need to be spent cleaning and/or waiting for the food to cook.

I usually gravitate towards meals in 30 minutes or less (hence my meal prep ebook) for easy family dinners, and recipes the whole family can enjoy.

Chicken is pretty well accepted in our house by all three kiddos – some favorites are chicken pasta with coconut milk, lemon pepper baked chicken tenders and of course, chicken meatballs.

And now this cheesy baked chicken is the new house go-to! Cheesy anything is goodness, right?

I buy large amounts of frozen chicken from Costco a few times a year, and they last us months.

When I get home from that shopping trip, I cut them all up into serving sizes and then freeze them individually.

That way, I only have to deal with raw chicken every few months vs. every time I buy it at the grocery store – life changing!

As long as I can remember to thaw it in the fridge overnight, cooking chicken is a pretty quick endeavor.

Ingredients You Need

Simple ingredients come together to make this extremely juicy and versatile cheesy baked chicken recipe.

  • chicken breasts
  • spice mixture – I used salt, black pepper, garlic powder, Italian seasoning and basil
  • toma tomatoes (or canned tomatoes)
  • mozzarella – You could use cheddar cheese or another type of cheese if you like, but I think mozzarella is the best for baked cheesy chicken recipe.
  • olive oil

How to Make Cheesy Baked Chicken

Cooking chicken can be difficult because you don’t want it chewy and overcooked, yet you need to cook it long enough for food safety reasons.

These tender chicken breasts are absolutely perfect.

I always recommend testing it with a food thermometer you trust. The internal temperature of cooked chicken should be 165 degrees F.

Before you start anything, preheat your oven to 400 degrees F.

Then, mix your spices and coat the chicken with 1/2 of the spice mixture.

Coat a baking dish with olive oil and place your seasoned chicken breasts on top.

Then, layer with sliced roma tomatoes, cheese and the other half of the spice mixture.

I will say that I love using some extra juicy tomatoes (more lycopene!) for toppings since they are just so delicious.

If you have garden tomatoes, even better!

Bake for 35-40 min or until internal temperature reaches 165 degrees.

Did You Know?

For food safety reasons, it’s bet to thaw meats overnight in the fridge, and make sure they are near the lower shelves so they don’t drip juices onto other foods. Make sure to test your done chicken with a food thermometer.


Expert Tips

  • How to store cheesy baked chicken – Keep it in the fridge in an airtight container for up to 3 days. You can also freeze it for up to three months.
  • How to reheat – To reheat this cheesy chicken bake, preheat your oven to 350. Cover the chicken with aluminum foil and bake for 20-25 minutes, until it reaches 165 degrees F by a food thermometer. I also sometimes like to add a little bit of chicken broth or bone broth the cooking pan to keep it juicy.
  • Thick vs. thin chicken breasts– I wouldn’t recommend overly thick chicken breasts, but not too thin, either. If your chicken breasts are too thin, they won’t hold the tomatoes and cheese as well. If they are too thick, they will take longer to cook through. I recommend somewhere in the middle. If you have thick chicken breasts, you can hammer them down to thin them out as needed.

Chicken pairs beautifully with so many things and is such a versatile dish! Anything that you would serve with chicken tenders works with chicken breasts as well.

Baked Cheesy chicken uses only one pan and a handful of ingredients for a juicy, flavorful chicken recipe. It's a great weeknight meal, or fancy up this cheesy baked chicken for a dinner party.

Prep Time 5 minutes
Cook Time 40 minutes
Total Time 45 minutes

Ingredients

  • 2 tbsp olive oil
  • Two 4-6 oz chicken breasts
  • 1/8 tsp sea salt
  • 1/8 tsp pepper
  • ¼ tsp garlic powder
  • ½ tsp Italian seasoning
  • 1 tsp basil
  • 2 small roma tomatoes, or 1/2 can of canned tomatoes
  • 4 oz fresh mozzarella, sliced

Instructions

  1. Preheat oven to 400. Mix your spices, and top the chicken with ½ the spice mixture.

  3. Sarah, this looks fabulous! Though I argue it’s hard to go wrong with tomatoes and cheese. I don’t cook chicken that often because I’ve had bad experiences, but I usually do all right with a recipe. Plus I can’t deny I love a one pan recipe!

    1. Chicken can be so pesky, but when it’s cooked right, I love it! That’s why we just usually do chicken sausage.

    Chicken is hard. I find it also depends on the cut or where you get it, but it is very easy to overcook and turn stringy. When I am able to get mine nice a juicy I totally do a happy dance. I think my favorite way to prepare it is in the slow cooker, of that very reason.
