I love to cook, but when kids have after-school activities, homework and sports to keep up with, it’s the first thing that goes to the way side if I don’t meal plan.
But, lucky for me (and you), I have a repertoire of family one pot meals I can fall back on if I didn’t plan correctly, or the week just got ahead of me!
We rely on meal prep snacks and even meal prep breakfasts for busy weeks, and these one pot meals can complement them nicely, providing you with ease and convenience.
So, save this post or keep these one pot dinners for families on hand when you need them! I even love them for one pan meals for fall because most of them are cozy, and pasta comes up alot.

To me, sheet pan dinners are like one pot dinners so I am including some sheet pan meal recipes in here. One cooking vessel does all of the work!
Dinner Shortcuts for Families
Keep staples on hand, like canned beans, quick-cooking rice, canned and frozen veggies, rotisserie chicken, etc. Many of my favorite pantry staples are key for these quick meals or shortcuts.
Even if you don’t physically prep all of your meals ahead of time, mentally planning which meals to make on what night is a huge help. Look ahead to what nights you need easy meals the most – nights with school/sports activities, solo parenting, etc.
Cook a batch of grains (rice, quinoa, pasta) on Sunday to repurpose all week.
Why are one-pot meals so great? Well, there are fewer vehicles for preparation (usually) and less things for cleanup!
