If you’ve never tried savory oatmeal before, you’re going to love this fun spin off with oats. This savory oatmeal recipe with eggs and sweetpotatoes is the perfect blend of savory, salty and umami, full of veggies, protein and fiber!

I know that savory breakfast oatmeal has been a thing for quite a while, but I’m new to the game in trying them.
I like a sweeter oatmeal bowl, with peanut butter, berries, chia seeds and milk. Or a banana baked oatmeal. Lots of delicious oatmeal recipes to choose from!
But I do really enjoy savory flavor, and I eat eggs nearly every day, so I decided to make some savory oatmeal with eggs for lunch one day and I absolutely loved it.
It’s a burst of flavor and texture – hard boiled eggs, crunchy bacon bits (optional), savory veggies, and fluffy oats. I love it with mashed avocado, but hot sauce or another sauce may be delicious, too!

Notes On Your Ingredients
Here’s what you’ll need to make this recipe.

- sweetpotato – This is a great recipe for leftover sweetpotatoes! However, you could also microwave your sweetpotato for 6-7 minutes and scoop out the mash to add more flavor quickly.
- quick cooking oats – Don’t use steel cut oats, as those will take longer to cook.
- bone broth or chicken broth
- water
- spinach or any choice of greens
- bacon, optional – I love it both with and without bacon!
- hard boiled eggs – I love the hard boiled eggs with savory oats, but you can truly cook the eggs any way!
- avocado
- seasonings – salt, pepper, everything but the bagel seasoning
- parmesan cheese – optional but great for a savory topping!
Topping Ideas
Personally, I found this savory oatmeal recipe flavorful enough that I didn’t need a sauce topping outside of cheese and mashed avocado. However, you could also drizzle with EVOO or hot sauce!
How to Make Savory Breakfast Oats
Cook the sweetpotatoes– The first step is to start cooking the sweetpotatoes, unless you have leftover sweetpotatoes on hand! Preheat the oven to 375 and dice up your sweetpotato. You can also substitute the sweetpotato for 3 large carrots and dice those to roast.

Start the savory oats – While the sweetpotatoes are baking, measure your oats, bone broth/chicken broth and water, and place in a small to medium pot over medium-high heat. Cover and cook for 5-7 minutes, until the liquid is absorbed and the oats thicken.
Add in spinach (if using) and mix until the spinach warms and starts to wilt, about 1-2 minutes.


Cook your bacon – If you are cooking bacon, start that step now. In a medium skillet, start cooking your bacon strips, turning as needed. Cook until it reaches the desired crispness.

Combine ingredients into your bowl – Once the savory oats are done cooking (meaning they have absorbed the bone broth and liquid), transfer them to a serving bowl or bowls.
Lastly, add the hard-boiled eggs, avocado (mashed or sliced), and cooked sweetpotatoes. Top with everything but the bagel seasoning, salt and pepper and parmesan cheese, or toppings of choice.

Save Leftover Sweetpotatoes
If you have leftover sweetpotatoes, this is a great use for them! It will also save you time in the recipe to not have to cook them.
Storage
While I do think these savory oats with eggs are best fresh, you can make extra oats ahead of time and refrigerate them for 1-2 days to reheat, and add your toppings before you enjoy.

Savory Oatmeal with Eggs and Sweetpotatoes
Ingredients
- 1 medium sweetpotato or 4 large carrots, diced
- 1 Tbsp olive oil
- ¼ tsp salt
- ⅛ tsp black pepper
- 1/4 tsp garlic powder
- 1 cup quick cooking oats*
- ½ cup bone broth/chicken broth
- ½ cup water
- 1 cup spinach
- 2 strips of bacon, optional
- 4 hard boiled eggs
- 1/2 medium avocado
- Everything but the bagel seasoning
- Salt and pepper, to taste
- 1 tbsp Parmesan cheese for topping
Instructions
- Preheat oven to 375. While oven is pre-heating, dice up your sweetpotato.
- Set diced sweetpotatoes on a baking sheet and season with olive oil, salt, pepper and garlic powder, and bake for 30-35 minutes.
- While the sweetpotatoes are baking, measure your oats, bone broth/chicken broth and water, and place in a small to medium pot over medium high heat. Cover and cook for 5-7 minutes, until the liquid is absorbed and the oats thicken. I sometimes turn the heat down after 5-7 minutes, and cook a little longer to break the oats down more.
- Add in spinach (if using) and mix until the spinach warms and starts to wilt, about 1-2 minutes.
- In a medium skillet, start cooking your bacon, turning as needed. Cook until reaches desired crispness.
- Once oats are done cooking, transfer them (with sauteed spinach) to a serving bowl or bowls. Add the hard boiled eggs, avocado (mashed or sliced), cooked sweetpotatoes and bacon.
- Top with everything but the bagel seasoning, salt and pepper and parmesan cheese, or toppings of choice.
