Why You’ll Love This Single Serving Pumpkin Cake
- Ready instantly – When you get the impulsive craving for a healthy dessert or sweet treat, this pumpkin mug cake to the rescue. Ready in minutes!
- Single serving – While it’s easy to make more than one, most people appreciate the nature of a single serving dessert to only eat a pre-made portion!
- No major cleanup necessary.
- Great way to use leftover pumpkin puree.
- Vegan and gluten-free – This vegan microwave mug cake fits nearly any dietary lifestyle. It’s also gluten-free since the base is made with sweetpotato and oat flour!

Ingredients and Substitutions
Here’s what you’ll need to make this recipe:

- oat flour – you can grind up oats in a high-speed blender to make your own or buy pre-ground oat flour. Use certified gluten-free oats if needed. White whole wheat flour is my favorite alternative!
- maple syrup – You can also use honey (not vegan), coconut sugar or brown sugar.
- pumpkin puree – Make sure it’s not pumpkin pie mix in a can. It will be too sweet and not the same texture.
- almond milk – I prefer a light almond milk, but cashew milk, soy milk, or even dairy milk can work.
- vanilla extract
- baking powder – This small but mighty ingredient helps the mug cake rise.
- pumpkin pie spice
- mini chocolate chips, optional – Enjoy life are vegan if you’re looking for a vegan microwave mug cake.
- pinch of salt – adds so much flavor!
- microwave-safe mug or ramekin

Sarah’s Notes
- Readers have had success using all-purpose flour or even cake mix in place of oat flour. I haven’t tried this recipe with alternative flours, like coconut flour or almond flour. Coconut flour is more dense so it may not work as a 1-1 replacement.
- For a chocolate sweetpotato mug cake, try adding 1/2 Tbsp of cocoa powder. It tastes like a mini chocolate sweetpotato cake!
- To add more protein, throw a scoop of your favorite protein powder in!
- If you want some nutrient-dense additions for kids, add a tsp of flax seeds or chia seeds.
How to Make A Pumpkin Mug Cake in the Microwave

Transfer to a ramekin or mug and microwave for 75-90 seconds.

Testing Note
If you find that your pumpkin mug cake is too hard and you want it softer, microwave it for less time. Every microwave is different, so you may need to play around with the time in 10-second increments. I loved mine at 70 seconds.

Testing Tips for Success
- You can double the recipe. However, if you do, I recommend using a small bowl or something bigger than a small mug, as it may overflow. You can also do two single servings and then combine them.
- All-purpose flour works in place of oat flour if you do not need it to be gluten-free.
- For a pumpkin protein mug cake, I’d recommend vanilla, chocolate or unflavored protein powder.
- I don’t like my pumpkin mug cake to be overly sweet so 2 tsp of maple syrup was more than enough for me. You can add more if you like it sweeter, like pumpkin pie.
