Am I the only one who thinks about snacks for road trips? I’m always concerned about what I’ll snack on during long car rides.

We drove to Savannah last weekend. We also traveled there for our Savannah babymoon. It’s one of our favorites.

You bet that I packed these chocolate peanut butter coconut balls along for the ride. Snacks are a must – always – especially if you have toddlers!

These peanut butter energy balls came about about while messing around in the kitchen and testing out my Ninja. I was trying to find a suitable match for these trail mix bites.

And by suitable match, I mean something with chocolate, as well wholesome ingredients that will leave you satisfied and energized, not sluggish.

Ingredients

I love showing off more ideas for coconut flour uses and versatility, like these coconut flour oatmeal cookies, and it’s the base for these delicious coconut peanut butter protein balls.

Here’s what you need:

  • oats – Make sure to use certified gluten free oats to ensure they are gluten free.
  • coconut flour – If you’re not a fan of coconut flour, you could also substitute protein powder if you want to add even more protein. I would probably go with a fudgey chocolate flavored one!
  • peanut butter – If you have a peanut allergy, you can always use almond butter, sunflower seed butter or another nut/seed butter!
  • honey – Use less honey if you want to make them less sweet or reduce the sugar content. Use agave to keep these peanut butter coconut bites vegan!
  • cocoa powder – The cocoa powder gives the perfect, subtle chocolate flavor. I highly recommend this fair trade one.
  • coconut flakes – These are fun, tasty and add more nutrition! These unsweetened flakes are my favorite.

Optional – You may also choose to add chia seeds, flax seeds, hemp seeds or other nutrient boosters, too!

How To Make Coconut Peanut Butter Balls

You probably have all of these ingredients for these peanut butter coconut balls in your pantry at home right now.

All you need is one large mixing bowl and a food processor or solid blender. You can leave out the chocolate, but c’mon, is chocolate ever optional?

First, mix all of your ingredients together in a bowl. 

Then, transfer to a high speed blender. If you prefer, you can add the coconut flakes last, but I actually like having small pieces in the actual batter for the texture.

Coconut flakes add flavor, fiber and some potassium.

Just make sure not to overprocess these no bake peanut butter oatmeal balls, or else they won’t stick as well.

If you have time, put in the fridge for 20-30 minutes to let them harden up.

Then, roll the batter into balls, adding more shredded coconut flakes on top. Using a cookie scoop helps!

Putting them in the fridge beforehand makes these peanut butter coconut balls much easier to roll.

Substitutions and Expert Tips

  • If you are allergic to coconut, leave the coconut flakes off, and swap the coconut flour for almond flour! Or, you could use protein powder instead of coconut flour for a similar taste and consistency. 
  • Make sure to use certified gluten-free oats (if you need them to be gluten free).
  • If the mixture seems too dry or dense after processing, you can add 1-2 tablespoons of almond milk, as needed to smooth them up.
  • I recommend letting them firm up in the fridge for 30 minutes or so before rolling into balls. It makes rolling them a lot easier and they will stick together better.
  • I love to make a large batch to freeze for later! They are great snacks on the go, before or after practice, after a workout, etc.!
  • Sometimes it helps to roll the peanut butter balls with coconut over parchment paper for easier clean up, since the shredded coconut can be messy.

How to Store Chocolate Peanut Butter Balls

You can store peanut butter coconut chocolate balls in the refrigerator for up to 1 week in an airtight container.

You can also freeze them in a stasher bag or freezer-friendly ziplock bag for up to 3 months.

Instructions 

  1. Mix all ingredients in bowl except extra coconut flakes, and transfer to food processor or high speed blender (I used a Ninja). Process for 30 seconds to 1 minute. Be careful not to overprocess. 
  2. Add the final coconut flakes after processing. If dough is too dry, add 1-2 tbsp of almond milk to smooth it up.
  3. Form into 12 one-inch balls. Transfer to fridge for 30 minutes to firm up!
