These Cheesy Potatoes and Carrots in the Crockpot are one of the tastiest, easiest crockpot potato recipes you’ll find. This tender combination of hearty potatoes and carrots is flavored with bits of bacon, butter and herbs, making for the most delicious cheesy crockpot potatoes.

Crockpot cheesy potatoes are so versatile, and work great as a side or a main meal that you can buff up.
I kid you not – we finished ALL of this recipe the first few times I tested it. It’s so good! And we’re usually relying on sweet potato recipes, but this potato recipe in the crockpot is a winner.
I love to serve them with lemon pepper chicken tenders or even our favorite bruschetta chicken sandwich.
If I have leftovers of these cheesy potatoes, I’ll even serve them with my favorite turkey burger bowl since it’s a bunless option.

- Easy and hands off – Not much manual labor for you – just set the ingredients in your slowcooker and let it cook for 3-4 hours.

Ingredients
I promise, the ingredients are minimal, but the flavor is long-lasting with crockpot cheesy potatoes.
- Potatoes – I prefer the baby red potatoes or baby medley, but if you prefer white potatoes, that works too.
- carrots – I recommend the large carrots, not baby carrots. Carrots caramelize and sweeten when baked – in the crockpot or oven. Another favorite recipe with baked carrots are my Balsamic Roasted Brussel Sprouts and Carrots.
- Fat – I like both butter and olive oil in this recipe but do what you love!
- Bacon – We get ours from Butcher Box and I can never go back to anywhere else. Such good quality.
- spices and flavorings -Garlic, Italian seasoning, oregano, parsley, salt and pepper help make these slowcooker carrots and potatoes irresistible
- feta cheese – Omit this if you’re not a huge fan of feta, but feta cheese potatoes are pretty darn good! If you’re not a cheese fan, drizzle this honey lemon dressing on and thank me later.

How to Make Cheesy Crockpot Potatoes
The steps are simple for making these carrots and potatoes in the crockpot.
Just add all of the ingredients into the slow cooker, and allow them to sit and cook for 3-4 hours.
Feeding a vegetarian? Just leave the bacon out!

Unless you’re soaking or cooking potatoes for hours, they usually don’t absorb a ton of spices.
So, by letting them do their thing in the slow cooker, you get the best flavor possible.
When there are about 20 minutes remaining, add the rest of the bacon, cheese and parsley.

Entertaining Tip
Roasted crockpot potatoes are my go-to for having friends over because they are an instant “like!” Before serving, add more feta and parsley to make everything look extra fresh.

Cheesy Potatoes and Carrots in the Crockpot
Ingredients
- 2 pounds baby red potatoes, washed and halved
- 1 pound carrots
- 3 tbsp unsalted butter
- 2 tbsp olive oil or avocado oil
- 4 cloves garlic, minced
- 6-8 slices bacon, cooked
- 1 ½ tsp Italian seasoning
- ½ tsp dried oregano
- ½ cup feta cheese
- salt and pepper, to taste
- fresh parsley, for garnish
Instructions
- Add potatoes, carrots, butter, oil, garlic, three slices of bacon and spices into slow cooker.
- Cook for 3-4 hours on high, or until potatoes and carrots are tender
- Add the remaining bacon, cheese and some parsley with about 20 minutes remaining.
- Garnish with feta cheese and parsley
