I love a good healthy sheetpan recipe – especially as a new mom of four. You can’t beat the ease of prep and convenience.

In this sheetpan kielbasa recipe, you just need to chop the veggies ahead of time. I use my vegetable chopper to speed things up.

You can add your favorite seasonings and herbs. The blend of kielbasa, potatoes, and veggies creates a delicious, savory flavor that I just absolutely love! But, if you can’t find kielbasa or don’t like it, you can make this Sheet Pan Sausage and Veggies.

What You Need

Here’s what you’ll need to make this recipe:

  • kielbasa sausage – You could also use pork sausage or chicken sausage
  • russet potatoes – You don’t have to skin them if you don’t want! I usually leave the skin on for extra fiber and nutrients.
  • veggies of choice – I used carrots, zucchini and peppers
  • spices – I used garlic powder, onion powder, paprika, salt and pepper

How to Make Sheet Pan Kielbasa and Vegetables

While your oven is preheating, cut up your veggies and place in a large bowl (I used potatoes, pepper, zucchini and corn). Add the olive oil and spices and mix.

Transfer the veggies to a baking sheet and bake for 20 minutes. Slice up your kielbasa while the veggies are cooking.

Add kielbasa pieces to the sheetpan with veggies and cook for another 15-20 minutes.

Your meal will be done when the veggies are tender and soft. This may depend on what veggies you use, as some will take longer to cook!

Tip for Picky Eaters and Kids

It’s easy to separate all of the components when serving to kids. I love these kids plates too! You can also keep them all separate on the baking sheet when baking, rather than mixing.

Ingredients  

  • 12-14 oz kielbasa sausage, sliced into ½” thin coins
  • 3 large russet potatoes, diced into ½”-1” pieces
  • 1 red bell pepper, sliced
  • 1 medium zucchini, diced
  • 2-3 large carrots, diced
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • salt and pepper, to taste

Instructions 

  1. Preheat oven to 375 degrees F.
  2. Cut up your veggies and place in a large bowl (I used potatoes, pepper, zucchini and corn). Add olive oil and spices and mix among all of the veggies.
  3. Transfer veggies to a sheetpan and bake for 20 minutes*
  4. Remove sheet pan from oven, toss veggies, and add kielbasa slices (or sausage or protein of choice) to the sheet pan. Bake for 15-20 more minutes, until veggies are tender.
