I’m a sucker for easy meals (as I’m sure most moms are), so this sausage and veggie sheet pan is appealing for so many reasons.

I love sausage – it’s on our weekly grocery list, partly because my kids love it so much too. It’s full of protein, but salty and savory, and the flavor pairs so well with veggies of all kinds!

This is a main appeal of sheet pan recipes for me – different proteins pair well with veggies and flavors combine beautifully! Sheet Pan Salmon and Veggies is another favorite.

In this sheet pan sausage and veggies recipe, we’re using corn, onions, peppers and sweetpotatoes. It’s a golden meal for any time of year (especially with that summer corn!) and it’s so pretty and colorful too, if I do say so myself!

It’s a slightly different take on my air fryer sausage and veggies – here, we’re using red onion and adding some ears of corn, balancing natural savory and spicy flavors with sweetness.

  • Hands Off – There’s only 5-7 minutes of prep to cut your veggies – but a vegetable chopper really helps! Then, the oven does all the work so you can attend to other things. Sheet pan sausage, potatoes and veggies really is a crowd pleaser!
  • Easy clean up – Sheet Pan Dinners are my favorite for this very reason. You don’t have hundreds of bowls to clean up! Most of the prep is just chopping the veggies, which you can do earlier in the day if you need to.

Ingredients

Here’s what you’ll need for sheet pan veggies and sausage. It’s a very adaptable recipe, so personalize it how you like!

  • sausage links of choice – I used pork sausage. We’ve also enjoyed these sheet pan veggies with kielbasa and Italian sausage.
  • onion – I love the peppery taste of red onion here.
  • red pepper – Red peppers are my favorite, but use any color you have.
  • sweetpotatoes – I wouldn’t trade out white potatoes here, I think the sweetpotatoes really shine and provide a natural sweetness with the corn to balance the savory onion and sausage.
  • corn – I’ve used ears of corn, but you could also use canned corn
  • butter – Melted butter over sausage and veggies is a chefs kiss for me! But you could also use olive oil, avocado oil or coconut oil
  • Italian seasoning
  • garlic powder
  • paprika

How to Make Sausage and Veggie Sheet Pan Dinner

First, preheat your oven to 375 degrees F.

Dice your veggies (I use this vegetable chopper to save time) and place them on a greased sheet pan or silpat. Add your corn and sausage links.

Then, melt the butter and combine it with the spices in a small bowl.

Pour the mixture over the sausage and veggies sheet pan and mix.

Bake for 45 minutes, or until sausage is cooked through. Flip halfway.

Tips for Success

Here are some tips that I recommend for the best outcome:

  • Using a vegetable chopper really helps to make sure the veggies are cut in similar sizes. This helps them cook more evenly!
  • Different types of sausage will cook more quickly. If you are using pre-cooked chicken sausage, you can add them halfway through the cooking time.
  • You don’t really need a sauce, since this entire sheet pan meal is flavorful on its own. But if you have a chipotle ranch or avocado crema that you like, both would be great!

Ingredients  

  • 4 sausage links of choice* I used pork sausage
  • 1 medium onion , sliced into julienne or rings
  • ½ red pepper, sliced into strips
  • 3 medium sweetpotatoes, diced
  • 2 ears of corn on the cob , husked and cut into 2-3 equal smaller pieces
  • 3 Tbsp butter, melted or olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp Italian seasoning
  • 1 tsp garlic powder
  • ½ tsp paprika

Instructions 

  1. Preheat oven to 375 degrees F. Remove sausage casings, if necessary
  2. Dice your veggies (onion, pepper, sweetpotatoes) and place on a sheet pan. Add your corn on the cob and sausage links.
  3. Combine melted butter and spice/seasonings in small bowl and give it a stir. Pour mixture over sheetpan and give everything a mix.
  4. Bake for 45 minutes or until pork is cooked through, flipping halfway.

Notes

*Note that different types of sausage (ie chicken sausage) may cook more quickly. If this is the case, or if you’re using pre-cooked, you can add your sausage about halfway through.
Cut the veggies into similar sizes so they cook more evenly.
