When I think of Christmas cookies, I don’t typically think of oatmeal peppermint cookies, but these healthy peppermint cookies have totally changed my mind.
Chocolate and peppermint – yes! But, peppermint oatmeal deserves a place on the table. These easy peppermint cookies are so good you’ll want bring them to your cookie exchange!
Now, I’m ready for the fun winter flavors, like peppermint, gingerbread, cranberries and pomegranate, which are all abundance in my favorite Christmas recipes.

These roasted brussel sprouts and carrots and gingerbread oatmeal are my holiday go-to’s. Once December rolls around, this Gingerbread Banana Bread is on repeat!
But, back to these delicious mint oatmeal cookies.
Cookies don’t typically last long in my house, especially these oatmeal mint cookies. Just two of our favorite flavors blended together.

What You Need
These peppermint oatmeal cookies are the perfect amount of “minty” with everything else going on with them.
- oats
- whole wheat flour
- coconut oil
- coconut sugar – You could also use brown sugar for a more molasses-y taste.
- egg
- peppermint extract – I really love this one!
- baking soda
- sea salt
- raisins
- chopped mints

How to Make Healthy Peppermint Cookies
These easy peppermint cookies will make you feel like a pro in the kitchen!
First, preheat your oven to 350 and line your baking sheet. Mix your wet and dry ingredients in separate bowls, and then mix them together in a large bowl.

Then, roll the dough into 12 small balls and place on the cooking sheet.

Finally, bake for 10-12 minutes. So easy! It will be hard, but allow ample time for them to cool and harden up slightly.

These easy homemade peppermint cookies are my favorite option to bring to loved ones and/or holiday gatherings, because they are just a little bit out of the norm! People typically think chocolate and peppermint, but not oatmeal peppermint cookies!
I’m already looking forward to the holiday Christmas cookie exchanges because I always come home with the most creative combinations.
Storage
These healthy peppermint whole wheat raisin cookies freeze well, too! I just throw extras in a stasher bag, and enjoy until New Year’s! They may not even last that long.
They will be good up to 2 months in the freezer.

Oatmeal Peppermint Cookies
Ingredients
- ½ cup coconut oil, slightly melted
- ½ cup coconut sugar
- 1 egg
- ½ tsp peppermint extract or 1 tsp vanilla extract if want less mint
- ¾ cup whole wheat flour
- 1 cup oats
- ½ tsp baking soda
- ¼ tsp sea salt
- ½ cup Sunmaid raisins
- ¼ cup chopped mints I used Andeys
Instructions
- Preheat oven to 350 degrees. Line cookie sheet with parchment paper or grease with butter and set aside.
- Mix coconut oil and sugar until combined. Add egg and peppermint extract.
- In a large bowl, whisk the dry ingredients – flour, oats, baking soda and salt.
- Mix wet and dry ingredients until fully mixed, adding in raisins and chopped mints last.
- Roll dough into small balls and place on cookie sheets.
- Bake for 10-12 minutes, or until edges turn slightly golden
- Cool on a wire rack or for 10 minutes before eating.

Alllll I’ve wanted in these past two weeks has been peppermint. Chocolate peppermint. Seriously, the christmas flavor cravings have hit me hard this year. Peppermint mochas. Peppermint hot chocolates. I’m basically pinning every peppermint brownie I see pop up on pinterest. So these are great. I’ve never seen anyone do the raisin and peppermint combo before. Interesting!
