It’s satisfying, full of necessary protein + carbohydrates, as well as necessary electrolytes, like salt and potassium.

We love to enjoy this on Christmas morning with baked pomegranate oatmeal. Plus, you can do some of the prep the night before. It’s easy to prep and then just stick it in the oven.

Here’s What You Need

A few notes about the key ingredients

  • Turkey sausage – I used pre-cooked, but uncooked turkey sausage also works. You can also substitute this for bacon or pork sausage.
  • Veggies – I used sweetpotatoes, mushrooms, onion and red bell pepper. You could also swap white potatoes in for the sweetpotatoes. Adding spinach, or greens, would also be delicious.
  • turkey sausage – I used pre-cooked, but uncooked turkey sausage also works. You can also substitute this for bacon or pork sausage.
  • eggs – I used six eggs total, but some readers had success with 8 eggs also.
  • shredded cheese – Goat cheese or feta cheese would provide a deeper flavor punch!
  • evaporated milk
  • spices – garlic powder, Italian seasoning, salt and pepper

How to Make This Breakfast Casserole with Turkey Sausage

While this sausage breakfast casserole does require some time to “sit” overnight, it is not very labor-intensive once it’s all mixed.

This overnight turkey sausage egg casserole will make your mornings easier and more delicious.

Plus, extra protein, veggies and fiber to keep you full!

And then the oven does most of the work while you can get your chores done, like laundry, cleaning, other meal prep (my meal prep ebook breaks down reusing leftovers and prepping multiple meals at once!) or even sneak a quick workout in.

You can easily do the preparation the morning of, and it will take about 10 minutes of prep!

To prep, cook your turkey sausage if it’s not pre-cooked. Cook your veggies as well in a hot skillet over medium high heat with a little olive oil, butter or coconut oil.

Prep Tip

Try to dice your sweetpotatoes in a consistent shape and size, so they cook quicker and more evenly.

Whisk your ingredients in a bowl, adding in the cooked veggies and turkey sausage last.

Then, let them cool and pour in a casserole dish for baking.

Bake for 45-55 minutes or until cooked through.

This works especially well on holidays because it’s very hands off after minimal prep. Save this holiday breakfast casserole recipe for when the time comes and you’re feeding a large group! 

Tips for Storage and Freezing

  • This turkey sausage breakfast casserole recipe will stay fresh for 3-4 days in the fridge. Or you can freeze it in freezer safe tupperware for up to 3 months!
  • To make this advance, get all of the prep work done until baking, and cover with aluminum foil. Then, place in the fridge overnight. In the morning, bake as described and then cut into individual slices after letting cool.
  • You can also freeze for later. To freeze, cover the unbaked casserole tightly. It will stay for 2-3 months in the freezer. When ready to bake, allow to thaw overnight in the freezer and then follow baking instructions. I’ll just prep two at once and freeze one for the following weeks

Ingredients  

  • 4 cups sweetpotatoes, diced about 2 medium sweet potatoes
  • ½ cup mushrooms
  • 1 small yellow onion, diced
  • ½ red bell pepper, diced
  • 2 Tbsp olive oil or butter
  • 16 oz turkey sausage precooked or uncooked both work
  • 6 eggs
  • 1 ½ cups shredded cheese of choice
  • 12 oz can evaporated milk
  • 1 tsp italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • ¼ tsp pepper

Instructions 

  1. Chop your vegetables (sweetpotatoes, mushroms, onion and red pepper).
  2. Preheat large skillet over medium high heat and start cooking sweetpotatoes with olive oil, butter or coconut oil.
  3. If your turkey sausage is not precooked, cook it. Preheat a large skillet over a medium flame. Heat cooking oil and add turkey sausage (remove caseings if necessary).
  4. In large mixing bowl, whisk together eggs, condensed milk, cheese and spices. In a separate mixing bowl, mix cooked vegetables and turkey sausage.
  5. Once turkey sausage and and vegetables have cooled, combine with eggs, milk and cheese mixture.
  6. Grease 9×13 casserole pan and pour combined mixture into pan, making sure to spread all ingredients out evenly.
  7. Bake at 350 for 45-55 minutes or until cooked through. Let cool and enjoy with your favorite toppings.

Notes

If planning to freeze turkey sausage breakfast casserole, continue to step 6 and then cover with foil and plastic wrap and place in freezer for up to 2-3 months.

      Have you ever tried a plant-based or cashew cheese? For shredded cheese, sometimes nutritional yeast can work to give that “cheesy” flavor!
