You only need a few ingredients for this air fryer recipe and you have a meal ready in under 15 minutes, which is perfect for those busy weeknights!

Ingredients
Here’s what you’ll need to make delicious Italian sausage and vegetables in the air fryer.
- Italian sausage links – I love mild or sweet sausage from Butcher Box, but you could also choose a spicy sausage. Don’t like Italian sausage or want a different type of sausage? Try chicken sausage! *If using pre-cooked sausages, they won’t need the full cooking time and you can add them when flipping halfway.
- sweetpotatoes – I’m a sweetpotatoes lover, so I prefer these antioxidant-rich potatoes, but you could also opt for baby potatoes, russet potatoes, etc. Purple sweet potatoes would also be fun!
- onion – I used a sweet onion, but you could also opt for a red onion if you wanted a little zing.
- red bell pepper – Any type of bell peppers will work perfectly. I also love green beans or cauliflower mixed in there.
- zucchini – Another fun way to add nutrition.
- oil – I usually stick to olive oil or avocado oil for healthy, unsaturated fats. Coconut oil could also work.
- spices – salt, pepper, garlic powder, Italian seasoning, onion powder, paprika. Feel free to use your favorite spice blend!

This sausage and veggie recipe in the air fryer is also incredibly versatile!
While I love how it comes out in the oven when I do a sheet pan meal, this way is just that much faster!
How to Make Air Fryer Sausage, Potatoes and Veggies
- After pre-heating your air fryer to 380 degrees F, slice your sausage. I prefer 1/4 inch to 1/2 inch rounds!

2. Then, you’ll dice up the vegetables and place everything in a bowl with the sausage, and mix evenly.


3. Spread the sausage and veggies out on the air fryer pan, so the pieces aren’t overlapping too much and cook for 12-14 minutes, turning halfway.
Note that you may have to do it in a couple of batches – you don’t want the sausage and veggies overlapping too much or they won’t cook evenly.


For reference, this is the air fryer I have and use. The timing/temperature may vary slightly based on different models.

Fast Instant Read Thermometer – You’ll use this more than you know! It works for meat on the grill or stove or oven, too. It’s super fast and the large screen is easy to read.
Reusable Air Fryer Liners – I love these for easy cleaning!
Plate Gripper – This is great for HOT things when they come out of the air fryer. Take care and don’t burn yourself.
Tongs – Tongs can be helpful for transferring seasoned items and then hot items after cooked in the air fryer.
Recipe Tips
- I prefer and recommend Butcher Box sausage – it comes out perfect every time! However, you can use chicken sausage or pork sausage in this recipe. Similarly, you can use sweetpotatoes or russet white potatoes!
- Depending on the size of your air fryer, you may have to do a couple batches. You want to make sure everything is in an even layer and the veggies and sausage aren’t overlapping.
- For the best results and even cooking and flavor, flip the sausage and veggies halfway.
- If you’re using chicken sausage that is pre-cooked, it won’t need the full 12-14 minutes to cook. I prefer to add it in the second half of cooking, after flipping the veggies and sweetpotatoes.
- To cook this in the oven, line a baking sheet with a silicone liner and bake at 400 for 20-30 minutes.
- Make sure to chop the veggies and sausage up evenly so it cooks evenly and distributes the flavor.
- Store leftovers in the fridge for up to 3-4 days!

Ingredients
- 1 lb sweet sausage*, sliced into ¾-inch round pieces
- 1 onion, diced
- 1 medium zucchini, diced
- ½ red bell pepper, diced
- 1 medium sweetpotato, diced
- 1 Tbsp olive oil
- ½ tsp salt
- ¼ tsp pepper
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 tsp onion powder
- ¼ tsp paprika
Instructions
- Pre-heat air fryer to 380 degrees F (190 deg. C).
- Slice sausage into 1/2 inch rounds and add to medium bowl. Dice up vegetables and place in bowl with sausage. Add olive oil and spices to bowl and mix together until everything is coated.
- Spread out on air fryer pan, so pieces aren’t overlapping too much.
- Air fry for 12-14 minutes, flipping halfway for even cooking and flavor.
Notes
*This recipe is based on raw sausage. If using pre-cooked sausages, add them in for the final 4-5 minutes.
