This no bake brownie recipe is our new favorite dessert. And since there’s no oven involved, I envision these being perfect for those hot summer days.
Just grabbing a chocolate bite out of the freezer and going on our way – like so many of our favorite no bake recipes!
These brownie bites are indulgent and decadent, but they are truly nutritious. Made with dates, almond flour, hemp seeds and nut butter, they are full of nutrient-dense ingredients.

Why I Love These No Bake Brownie Bites
- Healthy snack for kids– As a mom and Registered Dietitian, I try to be intentional about making snacks that offer extra nutrients, like protein, fiber and healthy fats, which these no bake brownie bites do! So many more ideas in my kids snack book!
- Ready in under 20 minutes – Say no more – a quick snack! They’re truly ready in under 10 minutes, but I like to allow 10 additional minutes in the freezer to firm them up a bit!
- Store in the fridge or freezer for longer – These will last 1-2 weeks when stored in the fridge, and up to 3 months when stored in the freezer in a stasher bag!
- Gluten-free and can be made allergy friendly – If you have a nut allergy, swap the almond flour for oat flour. The recipe already calls for sunflower butter.
- No added sugar – Dates are naturally sweetened and a great replacement for sugar since they also offer fiber and micronutrients! However, adding chocolate chips will add a little more sugar, but I think it’s a delicious add-in.

What I Used and Tested
Here’s what you’ll need to make this recipe:
- pitted dates – If you can find pitted dates, that will save you some time! If your dates aren’t soft enough, just put them in a bowl of hot water for 5-10 minutes to soften them up!
- almond flour – I love using almond flour to keep them gluten-free and add a “doughy brownie” texture. However, if you’re taking to a nut-free school or zone, omit or replace with oat flour.
- hemp seeds or chia seeds – These are my favorite nutrient add-in’s to increase protein, fiber, calcium, iron and more! A little goes a long way
- sunflower butter – I love using sunbutter as a replacement for nut butter. However, peanut butter works just as well if there are no allergies!
- vanilla extract – I like this pure one.
- protein powder or collagen – optional if you want to further increase the protein.
- raw cacao powder – Full of antioxidants and micronutrients. Cocoa powder also works!
- mini chocolate chips or cocoa nibs – optional

How to Make Brownie Energy Balls
Once you make these healthy brownie energy balls, you won’t want to find any other recipe!
First, soften your dates in warm water if you need to. I like buying the Natural Delights pitted dates; they are already soft and pitted.

First, add your cup of dates to a food processor and process until they start to liquify, about 2-4 minutes. It will start to form a light brownish paste.
Then, add in your other ingredients – 3 Tbsp almond flour, 2 Tbsp hemp seeds (or chia seeds), 1 Tbsp sunflower butter (or nut butter if not allergic), 1 tsp vanilla, 1 scoop protein powder/collagen (optional), and ⅓ cup raw cacao powder.


The mixture will start to darken and look more brownie-ish.

Hot Recipe Tip
If you do want your no bake brownie bites to be more fudgey, use an extra tablespoon of drippy nut butter and 1 Tbsp of milk. The batter should be much more uniform and sticky. But, place them in the freezer and they will be perfectly fudge-like after 10-15 minutes!
Lastly, add your chocolate chips to the batter and roll into 8-10 brownie bites.
If you have time, I like to stick them in the freezer for 10 minutes to firm up!

Expert Tips When Recipe Testing
Here are some tips that I troubleshot when recipe testing.
- If your mixture is too dry, you can add a tablespoon of milk. You don’t want it overly sticky though, either. Somewhere in the middle is ideal.
- While you don’t have to stick these no bake brownie bites in the freezer after rolling into balls, I find it helps them feel less sticky and more firm. The fridge is fine, too!
- A good quality sea salt on top makes a big difference! Just sprinkle it on top after rolling.
- If you want a fudgier texture and consistency, add an extra tablespoon or two of nut or seed butter, which will smooth out the batter.

Ingredients
- 1 cup pitted soft dates
- 3 Tbsp almond flour
- 2 Tbsp hemp or chia seeds
- 1 Tbsp sunflower butter or nut butter if not allergic
- 1 tsp vanilla
- 1 scoop protein powder/collagen optional
- ⅓ cup raw cacao powder
- ¼ cup mini chocolate chips or cocoa nibs
- 1-2 Tbsp milk, if needed
Instructions
- Add dates to food processor and process until they start to liquify (it forms a light brownish paste), for about 2-4 minutes.
- Add the other ingredients and process until blended.
- Take the sharp mixer out of the food processor and add mini chocolate chips to the batter (optional).
- Form into balls. Mine made about 8-10. Top with sea salt,
- Freeze for 10 minutes to allow brownie bites to firm up.
