Chewy Sweetpotato Oat Breakfast Cookies (Vegan)
Sweet potato oatmeal cookies are an easy snack anytime of the day, and perfect for breakfast. Made with whole grain oats, flour, sweet potatoes, spices and maple syrup, my version of these cookies is vegan and easy for meal prep. It’s a simple recipe takes only about 30 minutes, and is made without bananas, peanut butter, or nuts.

I had this idea to make some sweetpotato breakfast cookies to help us get veggies in during breakfast.
So, naturally, I thought of adding oats, some flour to make them sturdier, and before I knew it, these amazing sweet potato oatmeal cookies were born.
If I had to rename my blog, it would probably be something related to sweetpotatoes because we have so many easy sweetpotato recipes.
It’s hard to pick favorites, but I really love these oatmeal sweet potato cookies, as well as sweetpotato oat bars and sweetpotato pizza crust.
It’s hard to find breakfast cookies without banana or peanut butter, but these sweet potato oatmeal cookies are the magic solution. A breakfast cookie without nuts, too!

Gather Your Ingredients
A few notes on the key ingredients:
- all purpose flour – All purpose flour keeps these oatmeal sweetpotato cookies nice and light, but you could use whole wheat flour if you wanted. They wouldn’t be as soft.
- Oats – I prefer rolled oats!
- brown sugar – I love the flavor that brown sugar with molasses imparts, but if you don’t have it, white sugar will still work fine.
- flax egg – A real egg also works!
- sweetpotatoes – If you don’t have leftover mashed sweetpotatoes to use for this recipe, you can microwave a sweetpotato for 5-7 minutes or use canned sweetpotato puree. You could also substitute canned pumpkin.
- chocolate chips – I order my favorite vegan chocolate chips from Thrive Market

How to Make Sweetpotato and Oatmeal Cookies
To start, whisk your wet and dry ingredients separately in mixing bowls and then you’ll blend together.


For the wet ingredients, it helps to use an electric hand mixer to mix everything in a large mixing bowl, adding the egg, vanilla, and mashed sweetpotato in last.
I love the smell of all the fall spices!

This sweet potato cookies recipe is a great one to let your kids help – toddler sweetpotato recipes are the best.
Plus, since it’s vegan, it won’t hurt them if they choose to taste it as they go. I know that can be hard for my littles to abstain when there are eggs in the batter.

Secret Tip
Sprinkle with sea salt after baking to emphasize the deliciousness! Salt brings out more flavor.
When arranging on baking sheets, I like to use a cookie scooper to get perfect little bite-sized scoops.
Then, lightly flatten your sweetpotato oatmeal cookies for baking, adding a few extra mini chocolate chips on top.

Chewy Sweetpotato Oat Breakfast Cookies (Vegan)
Ingredients
- 1 cup all purpose flour
- 1 cup rolled oats
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ¼ tsp nutmeg
- ¼ tsp allspice or 1/8 tsp ginger and 1/8 tsp cloves
- ½ cup coconut oil, softened
- ½ cup packed light-brown sugar
- 1/3 cup maple syrup
- 1 flax egg
- 1 tsp vanilla extract
- 1 cup mashed sweetpotato* cooked and cooled
- 3/4 cup vegan semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees.
- In medium size mixing bowl, whisk together dry ingredients (flour, oats, baking soda, spices).
- In a separate mixing bowl, whip coconut oil and sugars using an electric mixer or hand mixer. Add in maple syrup, egg, vanilla extract and mashed sweetpotato.
- Add the dry ingredients to wet and mix until combined, adding in chocolate chips last. Batter will be wet. Let it sit for 5-10 minutes to firm up.
- Scoop out dough in 1 ½-2 inch scoops and arrange on baking sheets.
- Bake for 14-16 minutes. Allow sweetpotato oatmeal cookies to slightly cool before serving
