Sweet taters are just so versatile. Adding them to pasta or as sweetpotato nachos are some of our favorites.
This sweetpotato spaghetti recipe came about when I felt that our sweetpotatoes were on their way out.
And in an effort to reduce food waste, I decided to spiralize them to make these sweetpotato zoodles.
We’ve made pasta with sweetpotato sauce before, but now having a sweet potato sauce for sweetpotato pasta is even better.

I love the plant based protein in this recipe, thanks to the black beans.
This pasta recipe is high in fiber and antioxidants, too, and works well for kids and babies.
Plus, sweet potatoes for baby led weaning are perfect, and are always one of our baby led weaning foods for 6 months and beyond.
And then, when they get to be toddlers and have more opinions, mixing with cheese and pasta is hard not to like.

Sweet potato noodles have the firmness that traditional pasta has, so the consistency is similar. Since sweet potatoes are naturally sweet, they have a sweeter, lighter taste than pasta.

How to Spiralize Sweetpotato
Spiralizing a sweetpotato isn’t difficult if you have the right equipment. I used this spiralizer and it worked great.
I liked that it gives you different options for the final product, depending on the same, width and texture you’re going for.
You’ll want to peel your sweetpotato before placing it in the spiralizer. If it’s a big sweetpotato, I also recommend cutting it in half.
Then, you’ll push down firmly with the flat end on the level surface on the spiralizer, and churn the top handle as the spiralized zoodles come out of the bottom.

How to Make Sweetpotato Spaghetti
After spiralizing your sweet potato, start by sauteing your diced onion with some olive oil.

Then, add your sweet potato zoodles and cook for 8-10 minutes, until they have softened and are cooked.
Lastly, you’ll add the spices and black beans, before topping with cheese.

I like my sweet potato pasta noodles to be very cheesy, like a good sweet potato mac and cheese or the famous tiktok pasta with goat cheese.
You can add as much or as little cheese as you’d like, and can definitely use vegan, cashew-based or a plant-based cheese as well.
Use red pepper flakes to add a little spice!
Sometimes we’ll even combine this with regular pasta to mix things up.

Sweetpotato Pasta Sauce
The sweet potato pasta sauce is a super easy, 3 ingredient topper that goes perfectly with this sweet potato and pasta recipe.
Just microwave your sweet potato and let it cool. Then, remove the inside mashed part, and combine in a bowl with milk and pasta sauce.
And there you have it – the easiest sauce for sweet potato pasta.
It can also work on this toddler mac and cheese recipe too!
