As a Dietitian and recipe creator, I’m one to keep on top of the food trends and try as many as I can. I remember seeing different versions of this goat cheese pasta bake on tik tok throughout the summer, and it was finally time to try it!
Seriously, this baked goats cheese pasta is such an easy concept (like a dump and cook meal!) and I’m glad it was brought to my attention.
Even as a proclaimed goat cheese lover, a pasta bake with goat cheese never crossed my mind. I typically just add it to salads and sandwiches.
But, my kids love it too (as well as all pasta), so I got down to testing a few different versions. My final success, with sundried tomatoes, artichokes and spinach, has me wanting to share this baked goat cheese pasta with everyone!

This original goat cheese pasta is an easy one-pot recipe for the whole family – Anytime we have an opportunity to enjoy cheesy pasta or a cheesy baked pasta, we’re all in! It’s easy to make, freeze and enjoy.

Reasons to Make Baked Goat Cheese Pasta
Once the cheese melts, it’s almost magical how this baked artichoke pasta with creamy goat cheese forms this silky smooth sauce. Here are several reasons why you’ll love it.
- Easily customizable – Use whatever pasta shape you like, and add whatever veggies you like. I love red peppers and artichokes in pasta.
- One dish! We love one dish recipes in our house for ease, convenience and easy clean up! One pot taco tortellini is another favorite. It seems fancy, but it really is an easy recipe and one of my favorite 30-minute meals.
- Great way to get veggies in – Are you struggling with your toddler eating veggies? Pair it with something they love, like pasta! This goat cheese baked pasta is perfect, with spinach, artichokes and sundried tomatoes (without really tasting them). Similar to my hidden veggies mac and cheese.
- 30-Minute Meal – The pasta cooks while the roasted cherry tomatoes and goat cheese bake. Then, mix everything together. Similar to our favorite chicken coconut milk pasta, you can have this creamy sauce and pasta meal on the table quickly!

Ingredients
Here’s what you’ll need.
- grape/cherry tomatoes – We used fresh cherry tomatoes from our garden – so tender and juicy! These are the start of the show and really makes you appreciate juicy tomatoes.
- artichokes – I used canned artichokes seasoned with Italian spices. Easy to add in!
- red pepper – You can omit this or use any other bell pepper as well
- garlic – Fresh garlic, cheese, olive oil, tomatoes – A match made in heaven.
- olive oil – If you have an infused olive oil (garlic olive oil), that would be a great way to add more delicious flavor!
- herbed goat cheese – You can also use a plain goat cheese, but the herbed version adds more flavor. You could also opt for a block of feta cheese instead!
- spices – If you like yours spicier, opt for more red pepper flakes.
- baby spinach or other greens – These wilt nicely to add an extra few servings of veggies and nutrients.
- pasta – I used a blend of rotini and farfalle. You can use whatever you prefer. Some users have had success with an alternative pasta, like brown rice pasta or chickpea pasta, but the cooking time may vary.

Equipment
- Large pasta pot for boiling pasta and your choice of vegetables (I prefer this one because it’s non-toxic and stainless steel)
- 9×13 pan or casserole dish (I recommend a lasagna pan but a pyrex works fine)
- Cutting board (I like this anti bacterial cutting board and it’s super easy to clean)
- This silicone pasta clip strainer is a game changer! It saves you from using a colander to drain your pasta.
How to Make Goat Cheese Baked Pasta
We made a few swaps to the well-known goat cheese pasta casserole, but it’s for the better, in my humble opinion.
First, you’ll pick out your wonderful cherry tomatoes, the star of the show. We used some from our little garden!
Then, you’ll mix in diced pepper and artichokes (if using), and put them in your large baking dish. Add some olive oil and give it all a little stir.

Create a little hole in the middle for your goat cheese log and sprinkle your herbs on top.
Then, you’ll bake that for 30-35 minutes before adding in your cooked pasta. When cooking your pasta, make sure not to overcook it! We want it al dente.
Al dente pasta is generally pasta that is cooked for 6-7 minutes. It is cooked just long enough that it is neither crunchy nor too soft.


The melted goat cheese, spices, herbs and baked veggies do all the work to marinate all the flavors.
This baked goat cheese tomato pasta recipe is a great way to try artichokes and add them to your diet, too! I love to enjoy it with a nice crisp glass of wine.
The reserved cup of the pasta water will help keep everything creamy. I chose to use milk instead for additional nutrients, so you can choose whatever suits you best!

Storage and Expert Tips
- You can swap different pasta shapes in. With kids, sometimes it’s fun to have a few different shapes! I like to serve it as a side for chicken tenders.
- If you want to use a protein or bean-based pasta, swap it in. Make sure to reserve the pasta water for extra starch!
- If you can find an herbed goat cheese, I find that it brings more flavor and depth to this goat cheese pasta bake! I like the one on ALDI. Otherwise, a block of plain goat cheese is fine too.
- I recommend canned artichokes – they are so much easier than cutting a fresh one. All about efficient shortcuts here.
- Store for up to 4 days in your fridge in an airtight container or freeze for up to 3 months.

30 Minute Baked Goat Cheese Pasta
Ingredients
- 1 pint grape tomatoes
- 1/3 cup diced red pepper
- 4-6 oz canned artichokes
- 4 cloves garlic
- 3 tbsp extra virgin olive oil
- 5-6 ounces of herbed goat cheese
- ½ tsp Italian seasoning
- ½ tsp salt
- ¼ tsp ground black pepper
- 12 oz pasta I used a blend of farfalle and rotini
- 3 cups spinach
- 1/3 cup full fat milk or pasta water Reserve from cooking pasta
Instructions
- Preheat oven to 400 and coat a 9×13 baking or casserole dish with olive oil or cooking spray.
- In baking dish, combine tomatoes, diced peppers, artichokes and garlic, and toss with olive oil.
- Make space in the center of the dish by pushing tomatoes, peppers and artichokes to the sides and place goat cheese log in the center. Sprinkle blend of spices over everything.
- Bake for 30-35 minutes, uncovered.
- While your goat cheese is baking, bring salted water to a boil in a medium pot, and prepare your pasta al dente.
- After cooking, check for doneness (cheese should be melting). Use a spoon to mix the pasta around and add greens.
- Lastly, add milk or reserved pasta water. Stir the dish until creamy and liquid is absorbed.
- Add basil or herbs on top, to taste.
