I’m excited about today’s baked sweetpotato oatmeal. I know you’re thinking…sweetpotatoes in oatmeal?

Sweetpotatoes in oatmeal is just one of the many ways to cook with sweetpotatoes. They add a nice sweetness, and of course, a dense nutrition profile!

Sweetpotatoes plus blueberries for the win! We all know blueberry baked oatmeal is a keeper, and this sweetpotato oatmeal bake WITH blueberries is definitely a winner.

We make Strawberry Baked Oatmeal in the summer months and rely on sweetpotato oatmeal and Apple Pumpkin Pie Baked Oatmeal in the fall months.

Oatmeal and sweetpotatoes just go together so well, especially if you’re doing some oatmeal breakfast meal prep. Sweetpotato baked oats are a great way to get extra veggies in at breakfast!

I also happen to think that sweetpotatoes and blueberries are made for each other, especially in this sweetpotato baked oatmeal.

I promise you’ll agree after you give this healthy baked oatmeal a shot. It’s a great healthy breakfast for athletes and one of my favorite breakfasts to eat before running.

It digests quickly, but if you need some staying power with it, pair it with some yogurt or peanut butter – healthy fats and protein!

My toddler also happens to love this sweetpotato blueberry baked oatmeal (it’s a great baby breakfast idea!). We often alternate between this and baby french toast sticks.  

Remember my blueberry sweetpotato bread? This is a fun twist on that. Ultimately, both have the same purpose: to be slathered with peanut butter and devoured.

We also have hints of cinnamon, butter and some maple syrup in here. So every bite is literally, the best thing ever.

Ingredients For Sweetpotato Oatmeal Bake

Sweetpotato baked oats offers the benefits and nutrition of both fruits AND veggies in your breakfast.

There are not many recipes you can say that about!

  • Sweetpotatoes – They mash up so well and not only provide ample vitamins and minerals, but a subtle sweet taste and texture. 
  • Blueberries – Fresh or frozen work well!
  • Eggs
  • Milk – I used 1% but any milk you like will work. Use dairy-free if needed. 
  • Oats – I recommend rolled oats.
  • Maple SyrupI recommend grade A all the way! See below on how to omit this for a sugar-free recipe.
  • Butter – You can substitute for coconut oil, but I happen to think that there is nothing that compares to melted butter. 
  • 2 quart baking dish – I love this pyrex because it comes with a handy top to make your meal prep oatmeal sealable!

There is so much natural sweetness from the fruit and maple syrup in this sweetpotato baked oatmeal, plus the cooked sweetpotatoes add more natural sweetness.

You can cut back on, or even take out, the maple syrup to reduce the sugar content.  

Recipe Modifications

  • Gluten Free Sweetpotato Oatmeal – As long as you use certified gluten free oats, this sweetpotato baked oatmeal recipe is gluten-free. 
  • Dairy Free – Use non-dairy milk, like almond, cashew, pea or soy milk.
  • Vegan or plant based – To make a vegan baked oatmeal, you can use flax eggs. You can also substitute coconut oil for the butter.
  • Sugar Free – You can omit the maple syrup and replace with 1/4 cup of milk to reduce added sugars. Follow all of the other directions!

How to Make Sweetpotato Baked Oatmeal

I love how easy this recipe comes together and how well the flavors mesh in this oatmeal meal prep dish. It WILL make your life easier and more delicious.

You’ll just need two bowls for this baked sweetpotato oatmeal. Mix the wet ingredients and in a separate bowl, mix the dry ingredients.

You’ll then mix them both and pour them into a casserole dish and bake for 30-35 minutes. 

After baking it, let it cool and store it in the fridge for up to 5 days. You can also freeze it for up to 3 months!

It’s a great postpartum food idea (that’s ready quickly!) and a wonderful, nutrient-dense freezer meals for new moms. I always make it and bring it over to new moms.

HOT TIP

I like to add the blueberries last to prevent any staining and them bursting. 


Meal prepping oatmeal is my favorite and so helpful for a busy week. You make it once and then reap the benefits for days, which is why it’s a great form of oatmeal meal prep.

You could make it on Sunday and have it last through the week. It can be a pre- or post-workout breakfast or snack, a healthy sweet potato oatmeal for baby meal, or a kid-friendly way to get fruits and veggies in at breakfast.

Can you freeze sweetpotato oatmeal?

Yes! Just let the oatmeal bake cool after cooking, and then cover and freeze in an airtight container for happier future times. This article from the Huffington Post talks about benefits of freezing oatmeal into cups, but it works for oatmeal bakes too!

Ingredients

  • 2 cups uncooked rolled or old fashioned oats
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1 1/2 cups milk (I used 1%)
  • 2 large eggs
  • 1 cup mashed sweetpotato, cooked
  • 1 1/2 Tbsp butter, melted
  • 1/3 cup maple syrup, plus more for drizzling
  • 1 tsp vanilla extract
  • 2/3 cup blueberries

Instructions

  1. Preheat oven to 350 degrees.
  2. Coat the inside of a 2 quart baking dish with butter, oil or non-stick spray.
  3. Mix dry ingredients (oats, baking powder, salt, cinnamon).
  4. Beat in milk, eggs, sweet potato, butter, maple syrup, and vanilla extract.
  5. Mix all ingredients together, saving blueberries for last to prevent staining and/or crushing, and spread inside the dish.
  6. Bake for 30-35 minutes, until oats are tender and moisture has been absorbed.
  7. Drizzle with a little maple syrup, to taste.

Notes

Note: You can use frozen blueberries in this recipe too.

Some readers have shared success in leaving the maple syrup out and replacing it with 1/4 cup milk.

  1. This is DELICIOUS!! The only thing I changed is I substituted the maple syrup for agave instead. I will definitely make it again!

  2. I made this for breakfast this morning, and it’s really yummy! I love the combination of sweet potatoes and blueberries! Instead of mixing the blueberries into the oat mixture at the end, what I did was sprinkled half the blueberries on the bottom of the pan, poured the oat mixture over the top of the berries, and then sprinkled the other half of the blueberries over the top and pressed them gently into the batter. This worked really well, and there was no bleeding. I love that this can be frozen as well. Thanks for a great recipe. It adds some great variety.
