Silken Tofu Brownies are a delicious and healthy after-school snack. These easy fudgy vegan brownies are a great way to satisfy your sweet tooth after dinner.

I bet you didnโt know you could make fudgy brownies with tofu, but these are about to blow your mind.
I tend to have a sweet tooth, and enjoy a nice piece of chocolate after a meal or a sweeter snack.
These healthy tofu brownies are fudgy and chocolatey and oh so delicious!
You would never know theyโre made with tofu, which makes them one of my favorite easy silken tofu recipes! Itโs so magical how such a protein-rich staple can transform into these.

My kids ask for these after school or in their lunches, and Iโm so happy to know they are getting some extra protein.
These and my no bake cookie dough bites are sure wins for the kiddos.
What is Silken Tofu?
Silken tofu is undrained, unpressed tofu, and is the star of the show in these easy vegan chocolate brownies.
It is much softer than regular tofu, which makes it great for creamy recipes, blending, and pureeing.
Like tofu, silken tofu is gluten-free, cholesterol-free, dairy-free and vegan, so it is popular among many dietary lifestyles.

We use it in meal prep often! Itโs a staple in this tofu pesto recipe!
Tofu also offers calcium, manganese, iron and fiber. In fact, there are nearly 3 grams of fiber per half cup!
Why We Love Silken Tofu Brownies
The taste is unmatched, for one. And brownies with tofu are just so darn fun to share with friends and family, whether they are vegan or not.

- Great as an after-school snack โ My kids tend to love โsweetโ things, as Iโm sure most kiddos too. These brownies also pack a punch of nutrition, including protein, fiber and vitamins!
- Great for all dietary lifestyles โ Since they are naturally vegan brownies, tofu brownies are great for most all dietary lifestyles, plant-based or not.
- Hidden veggies โ Iโm not always about hiding veggies in my toddlerโs food, but these brownies with zucchini are a great way to get toddlers to eat veggies if their diet is lacking, which is totally normal by the way. And I say this as a Registered Dietitian. Zucchini is one of the best to do so because itโs totally flavorless. Plus, even if they did know these were zucchini brownies with frosting, wouldnโt the frosting seal the deal?
- Ready in 30-40 minutes โ Donโt we all need more recipes with a 30-minute clock on them? Anything longer than that feels like ages!
- Nutritious โ As a dietitian, having a nutritious, balanced snack isnโt always a necessity, but itโs a major plus, and these tofu brownies are just that. Offering protein, fiber, carbs and a slew of micronutrients, you can feel good about your kiddos (and you!) eating these healthy vegan chocolate brownies.
- Easy to Freeze โ Who doesnโt love a good freezer-friendly snack? Just thaw overnight or take out and microwave when youโre ready to enjoy. Freezable meals for toddlers have come in handy so many times, and it can be the same with snacks!

Ingredients for Tofu Brownies
Hereโs what youโll need to make the most delicious vegan chocolate brownie recipe.
- silken tofu โ if you canโt find it in grocery stores, you can buy it on amazon. I wouldnโt suggest using a firm tofu in these tofu brownies. Firm tofu is denser and sturdier (great for air fryer tofu nuggets!) and may produce harder brownies with a denser texture.
- zucchini โ You donโt taste the zucchini but it adds some nutrition and fiber.
- coconut oil
- coconut sugar
- vanilla extract
- flour- I used all purpose flour in these brownies.
- cocoa powder
- baking powder
- chocolate chips โ You can also use peanut butter or butterscotch chocolate chips (these are vegan).
- salt

The peanut butter swirl just needs peanut butter and water, and totally upgrades these vegan fudgy brownies a few notches.
The swirl is similar in these brownies with banana and peanut butter, too.
How to Make Vegan Fudgy Brownies
- Start by pre-heating your oven to 350 and line an 8ร8 baking pan.
- Peel and shred your zucchini and wring out extra moisture.
- Add the tofu and wet ingredients to a bowl, followed by the dry ingredients and then mix the two.
- Pour the batter into your baking pan, and add the peanut butter swirl on top.




How to Store Silken Tofu Brownies
Store in an airtight container for 3-4 days.
To freeze, let them cool completely and then place them in a freezer friendly bag, stasher bag or tupperware container for up to 3 months.

Silken Tofu Brownies (Vegan Fudge Brownies)
Ingredientsย ย
- 8 oz silken tofu 245 g
- ยผ cup shredded zucchini
- 3/4 cup coconut oil, melted or butter if not vegan
- 1 cup coconut sugar or white sugar
- 2 tsp vanilla extract
- 1 cup all purpose flour
- 1 cup unsweetened cocoa powder
- ยฝ tsp baking powder
- ยผ tsp salt
- ยผ cup Peanut butter
- 2 tbsp water
- 1/3 cup chocolate chips or peanut butter chips
Instructionsย
- Preheat oven to 350. Line 8ร8 baking pan with parchment paper.
- Measure 8 oz of tofu (it usually comes in a pack of 12-16 oz).
- Peel and shred zucchini (I like to use a box grater). Wring it out with a dish towel to remove excess moisture.
- To a medium mixing bowl, add tofu, zucchini, coconut oil, sugar and vanilla extract (Note: you can also use a blender or mixer to do this).
- Add in dry ingredients: flour, cocoa powder, baking powder and salt. Gently mix together.
- Pour batter into parchment-covered 8ร8 baking pan.
- Mix peanut butter with water in microwave-safe bowl and heat until peanut butter is melted (in increments of 15 seconds). Stir well and drop it on the brownie mix in the parchment pan. Take a fork or knife and swirl it around.
- Lastly, add in chocolate chips to top, and sea salt, if desired.
- Bake for 30-32 minutes, or until toothpick inserted comes out clean.ย
