My kids absolutely love popsicles in the summer months – well actually, year round. I can’t do a popsicle in the cold, winter months, but maybe I could settle for these yummy chocolate popsicles for a nighttime treat.

They’re thick, like chocolate fugdsicles, and loaded with extra fiber and nutrients from the hidden sweetpotato.

If you’re weary of adding the sweetpotato, you don’t necessarily taste it, but it provides extra nutrition and fiber. You can leave out if you please.

Ingredients For Fudgy Popsicles

Here’s what you’ll need to round up with some key notes.

  • heavy whipping cream – The extra fat is important here to make it thick, so I don’t recommend swapping for a low fat milk.
  • coconut milk – Make sure it’s full-fat coconut milk, not low fat.
  • cornstarch – This helps thicken everything up nicely without changing the flavor. It makes your popsicles creamy, like fudgsicles, rather than super icy.
  • maple syrup – Since cocoa powder can be bitter, the maple syrup helps sweeten things up. You could also opt for honey.
  • optional toppings, like sprinkles, oreos, dried fruit, etc. for fun toppings!

How to Make This Sweetpotato Chocolate Popsicle Recipe

First, you’ll want to microwave your sweetpotato for about 4-6 minutes. If you have leftover sweetpotato flesh, you can use that.

Otherwise, you’ll scoop out the sweetpotato flesh (about 1/3 of a cup total).

I like to use the back of a fork or a potato masher to get as many of the lumps out as possible! See the notes below for more tips.

Next, add all of your ingredients (minus the chocolate chips to a medium pot), bringing it to medium-high heat.

Bring the ingredients to medium-high heat for 5-7 minutes, until the sweetpotato dissolves.

As the mixture thickens, add your chocolate chips in and mix well into everything dissolves.

Tip For Pouring

I like using a heat-friendly funnel to pour the mixture into popsicle molds – it makes for easier pouring!

Then, arrange your popsicle molds and pour the chocolate pudding mixture into the molds.

Then, freeze for 4-6 hours and enjoy all summer long.

Tips for Success

Here are some tips I found from recipe testing to get the best outcome!

  • When pulling them out of the freezer, the molds may be very frozen, so I’ve found that running them under warm water for a few seconds helps release them from the mold!
  • If you are having trouble getting all of the mashed sweetpotato to dissolve in the pot, you can also add the mixture to a blender before pouring in the popsicle molds. 
  • Once the popsicles are frozen, I like to move them from popsicle molds into closed stasher bags so they are more contained and not exposed to air or smells from other things!
  • Can you leave the sweetpotatoes out? Yes! They add extra nutrition but don’t really change the flavor.

Ingredients  

  • cup mashed sweetpotato
  • ¼ cup cocoa powder
  • 1/8 tsp salt
  • 2 Tbsp cornstarch
  • ½ cup maple syrup
  • 1-1 1/2 cups heavy whipping cream
  • 1 ¾ cup coconut milk *full fat can also use oat milk
  • 1 tsp vanilla
  • cup milk choc chips
  • Colored sprinkles or crushed oreos to decorate, optional

Instructions 

  1. Microwave your sweetpotato for 4-6 minutes, until soft. Scoop out the flesh and mash it as much as you can (I do this in a bowl with the back of a spoon, but you could also use a potato masher).
  2. Add your ingredients (except chocolate chips) to a medium pot over medium-high heat for 5-7 minutes until heated and sweetpotato dissolves, stirring occasionally. The mixture will start to thicken.
  3. In the final minute, add your chocolate chips and stir until they melt and dissolve. Turn the heat off.
  4. Arrange your popsicle molds to pour the chocolate pudding mixture into. I like to use a funnel to do this for easier pouring.
  5. Freeze for 4-6 hours. When removing popsicles from molds, place the mold under warm water for a few seconds until the popsicle moves and releases from the mold.
  6. Enjoy as is! You can also dip in melted chocolate and add sprinkles, crushed oreos, or freeze-dried strawberries. To do so, add 1 cup chocolate chips with 1 tablespoon of coconut oil to the microwave, and heat in 30-second increments, until melted. Dip the tips of the popsicles in the melted chocolate, and then add your sprinkles, crushed oreos, etc.

Notes

Note: If you are having trouble getting all of the mashed sweetpotato to dissolve, you can also add it to a blender before pouring in the popsicle molds.
