We love sweet things in our house and this frozen cookie dough bites recipe is no different.

When possible, I love to include sweetpotatoes in sweet recipes, like no bake cookie dough bites, since they impart a natural and delicate sweetness, plus tons of other nutrients. 

A natural addition to these vegan cookie dough bites.

And to my surprise, I don’t have any frozen sweetpotato recipes on my blog, until now.

These edible frozen cookie dough bites are a continuation of my favorite vegan edible cookie dough – just frozen and in bite-size.

And I can’t think of anything better than making raw vegan cookie dough balls with them.

All of these ingredients are healthy and filling, which is why these edible raw cookie dough balls are perfect for easy road trip snacks and meal prep for busy college students.

All you’ll need to do for these vegan cookie dough balls is combine all of the ingredients in a food processor or high speed blender

I usually have leftover cooked sweetpotato, but if you don’t, you can microwave it for 5-7 minutes, and then let it cool.

Then, you’ll just add the mashed sweetpotatoes to the other ingredients in the blender.

You can taste as you go – Remember, these no bake cookie dough bites have no eggs and don’t need an oven!

Blend until everything is smoothly mixed, and add the chocolate chips last. 

Then, roll dough into small bites and place on a baking sheet or flat surface and place in the freezer.

After 45 minutes to an hour, they should be frozen and you can just grab a bite and enjoy.

Involve Kids in Making Vegan Cookie Dough Balls

I feel that it’s important that I mention this is a vegan edible cookie dough recipe, so yes, you can eat the dough.

Food safety is important here!

I know my child eats the dough for any cookie I’m making, so keeping it vegan is necessary sometimes to avoid any risk of foodborne illness.

I love to let Camryn help and blend the ingredients in our food processor.

Then, she’ll add in the chocolate chips (after taking several bites, naturally). 

Toddlers and kids will all love these vegan cookie dough balls.

The rolling part can get a little messy (see the FAQs and tips below), but letting your child scoop the dough onto a baking sheet to freeze is a nice way to involve them.

FAQs and Tips

How to store no bake cookie dough bites

Store these no bake cookie dough bites in the freezer. After rolling, I like to keep them flat on a baking sheet for a few hours. Then, once frozen, transfer to a ziploack bag or stasher bags. Store for up to 3 months!

Do I need to thaw before eating?

Nope! Just enjoy them frozen sweet potato balls when you want them, nice and frozen! You could always let them warm up to room temperature, but they will be very soft and mushy.

The Dough is Sticky, How Can I Make it Easier to Roll?

The cookie dough will be sticky since it’s basically a hummus-type dip. What I’ve found to help is grinding some oats (into an oat flour) and wiping that on my hands before rolling. I also use a cookie dough scooper to place on the baking sheet.

  1. Cook sweetpotatoes and let them cool.
  2. Drain beans and mix all ingredients in a strong blender or food processor and blend, adding chocolate chips in last. 
  3. Roll into small bite sized balls and place on baking sheet or flat surface and place in freezer for an hour or more.
  4. Take bites out when ready to enjoy!

Notes

Once bites are frozen, you can transition to a ziplock bag for storage.

  1. Hej! Can I make these without the sweet potatoes and or the garbanzo beans? How can I also make this with less carbs ?

  2. Your nutritional count is confusing for the carbohydrate count. Does it mean there are 11 grams of fiber and 6 grams of carbohydrate? I’m a Type 1 diabetic and need to know for bolusing purposes. Thanks!
