Our Relaxed Meal Planning This Week

Hello!

I’ve talked here and there about how I want to get back into some form of meal planning that will work for us. It doesn’t have to be super complicated and detailed, but just something that I can count on. There have been too many times where I don’t know where the days go and by the time dinner rolls around, I’m like “well eggs again tonight.” Not that there’s anything wrong with breakfast for dinner! But if I buy groceries, I want to use them. So, back to meal planning in an easy, first-time-mom way!

So, here’s what this week has looked like so far in terms of meal planning.

For grocery shopping, I pretty have been relying on Harris Teeter (our local store) because they do grocery pick up (it was $100/year, but I feel like it’s worth it). They are also just a few miles away from us. So, I order my groceries through the app at night (which I love because I can scroll through the weekly deals and pick things that way), and then set a time the following day to pick them up.

Convenience at it’s finest. I give so much credit to the moms who actually had to take the baby into the grocery store before this was invented. Exhausting! Although once Camryn can sit up on her own, I will probably take her shopping a few times and just put her in the front of the grocery cart.

So, here are some of what I bought this week and how I’ve used it or plan to use it. When I’m planning meals, it’s mostly dinner. Right now, I pretty much do some form of oatmeal for breakfast (love when I bake this) and eggs/toast/veggies or turkey sandwich or wrap for lunch.

Grocery List

Carbs

English Muffins, Sweet Potatoes, Russet Potatoes

Already had – quinoa, brown rice, pizza dough, crackers

Proteins

Chicken sausage, Tempeh, Eggs

Already had – Tofu, Ground Turkey

Veggies/Fruit

Asparagus, Broccoli, Zucchini, Baby Carrots, Kale Salad Mixes, Bananas, Raspberries – for snacks, oatmeal/yogurt, Pineapple – for snacking, Frozen Blueberries – for oatmeal/yogurt

Already had – spinach, grape tomatoes

Other

Hummus, Avocados, Ice Cream – {always 🙂 }, Coffee Creamer, Milk, Shredded cheese – for pizza

Monday

Salmon (we had two frozen that I wanted to use) + asparagus + baked potatoes. I marinated the salmon in olive oil, soy sauce, garlic and dijon mustard. I baked the potato and asparagus on a sheetpan at 375 for 45 minutes, marinated with olive oil, garlic, sea salt, pepper and paprika.  Then a few minutes under the broiler because I like it crispy.

Tuesday

Homemade pizza! We had Trader Joe’s herb pizza dough already on hand and added lots of the veggies from this week – grape tomatoes, spinach, chicken sausage, peppers, onions and cheese.

Wednesday

We have our 3rd wedding anniversary dinner tonight at Capital Grille! I’ll probably get steak 🙂

Thursday

Sweet Potato Turkey Burgers with avocado slices – these are my go to because they only require like two real ingredients (sweet potatoes and ground turkey) plus spices. Plus, they are super quick and I can make them in my sleep now. I’ll probably saute some veggies on the side, like broccoli and zucchini with the kale salad mix, or whatever we have leftover at this point.

Friday

Probably BBQ tempeh (I’m a sucker for that flavor combo) + carrots and hummus + either quinoa or smashed sweet potatoes.  And, let’s be honest, I’m just going to use store bought BBQ because while making my own sounds fabulous and may taste better, I’m a realist and store bought tastes pretty good and is quick!

Examples of Lunch/Snacks

English muffin + avocado + eggs with spinach + kale salad mix + banana and pb

Pineapple that I munch on all day!

So that’s what this week has looked like so far, and what I’m planning for. I hope this post shows you that meal planning DOESN’T have to be over the top outrageous, time consuming and detailed. We try to keep it simple.

  1. Homemade pizza is the best! That herb pizza dough from TJ’s is amazing. I got my cousin hooked on it haha. Enjoy your wedding anniversary dinner tonight!!

    I actually don’t mind grocery shopping but I feel like so many people hate it! My tip is to have a list and then I go through the store and get what I need because I’ll put it in the order of the store. So much easier!!
